Meeting a familiar face from my hometown Ipoh can be very exciting while indulging his food was truly explosive and he is Chef Jumaris. He is currently showcasing his talented culinary at Paya Serai and also promoting food from the Perak state. Uniquely Perak.

There were spread of delicious and delicate cuicine from the state of Perak while cultural dance was on showcased that night. It was a mouth-watering cuisine. There were Kerabu Darun Selom, Ulam Rampai, Nangka Masak Lemak Lada Hitam Larut Matang, Laksa Kuala Kangsar, Ayam Goreng Kampong Tanjung Malim, Udang Tumis Jawa Sungai Manik, Mee Coreng Basah Udang Sungai Perak, Daging Rendang Tok Bandar Baru Klebang, Sup Durung Puyuh, Siput Sedut Masak Lemak Chili Api Gopeng, Isi Ikan Patin Goreng Masak Cuka, Lala Tumis Pedas Bersantan, Char Kway Teow in Ipoh Style and plenty more on offering.

Udang Tumis Jawa Sungai Manik

Ingredient (for 10 servings)
1kg Prawns (with skin)
10gm Chilli padi (Bird Chillies), sliced
50gm Red onion, sliced
30gm Garlic, chopped finely
10gm Ginger, sliced
10gm Dried chilli
50ml Tamarind juice
Cooking oil
Salt
Black Pepper

Method of cooking:
Heat up the cooking oil in a pan.
Stir fried the prawns till the tails turn red.
On a separate pan, sauté the chilli padi, red onion, garlic and dried chilli.
Add the cooked prawns and stir gently to mix them well.
Season it to taste before serving.

Ingredient (for 10 pax)
1kg Chicken, cut
50gm Red onion, sliced
30gm Garlic, chopped
10gm Ginger, sliced
10gm Chicken curry powder
0.5gm Turmeric powder
0.5gm Curry leaves
2nos Eggs
Cooking oil
Seasoning

Method of cooking:
Marinate the chicken with all ingredients in a mixing bowl.
Leave it aside for 30 minutes.
Heat up the cooking oil in a wok.
Fry the marinated chicken till golden brown.
Remove them from the wok and absorb the excessive oil with kitchen papers before served.
