DYNASTY Renaissance Kuala Lumpur Hotel MIGF 2010

Dynasty
DYNASTY Renaissance Kuala Lumpur Hotel

Dynasty Restaurant is one of the well refined Chinese restaurant that I frequent when I am think of having Cantonese cuisine and dim sum. Yet another thing about Dynasty that captured my attention is their interior and also their beautiful imported Japanese diningware. So elegant, so beautiful. Just love how food is being served with. This time I was back at Dynasty to enjoy the creation of Master Chef Tan Kim Weng who is well known for his seafood creations. What I love most is Master Chef Tan’s combination of Oriental and Western in crafting his Chinese dishes. It is always exquisite and fabulous. Having to bite into any of his creation will definitely get you hook for more and it did happen to me again this time. My journey of indulging his seven course meal was truly excellent. Got to mention, the wine was fantastic, definitely to my taste.

It was a change to have a more lighter dishes and also able to taste a different experience. We ordered the set for 6 persons which came with a moon cake platter as a sweet at the end of the dinner. My mates like the idea as the would like to try the mooncakes. We started off with the Yee Sang with additional finely sliced dates and also a hint of kaffir leaves.

It was truly fun to toast the Yee Sang over the Ramadan with my mates. We wished for a properous year with great health.

Endulging The Beauty of Mooncake . . .

0a

I visited the Prince Hotel & Residence Kuala Lumpur early this week for a Mooncake making demostration by Master Dim Sum Chef Loo Sai Wah of Tai Zi Heen Restaurant. . . got to tell you, it is really an honor to be able to meet the Master Chef of Dim Sum as I am truely a Dim Sum fanatic fan, my favourite Dim Sums are “Har Kau” & “Siew Mai” just like Kate Winslet & Leonardo DiCaprio both are so lovely and so desireable. Anyway my mission was to learn, understand and have my hands all over the mooncakes.

15a

Gosh . . . . an amazing variety spread of mooncakes waiting for me to taste . . . I just felt like I was an emperor at that moment endulging the mooncakes in my beautiful dining room. Sssssssssshhhhhhhhh…… I was a bit greedy as I had also set my eyes on this delighted golden orangy dessert just sitting infront of me, refusingly to leave me alone . . . . a chilled mango puree with vanilla ice cream, sago and pamelo . . . just exactly what I had in Hong Kong last year . . . so yummy especially you are a sweetie fan.

The Chef in charge had already preprepared the chocolat whiskey with walnut ball fillings and the snow skin mixture waiting to roll on.

Firstly Chef Loo roll the snow skin.

Once the snow skin is rolled, chef divided it into a few sub rolls.

Chef then roll the individual snow skin till flat forming a round flat snow skin.

It was time to cover the chocolat whiskey and walnut ball with snow skin.

Place the snow skin ball into the mold and gently press the snow skin ball into the mold to form the prints.

11a

Once completed, hit the mold gently to release the snow skin mooncake out of the mold.

Oh! I was so lucky . . . as I got to taste other baked mooncakes available at the Prince Hotel, Kuala Lumpur such as the pandan & pumpkin paste with single egg yolk, white lotus paste with macadamia nuts and also my favourate one, five variety nut with rum and raisins. I truely felt this trip was so worth while and so fruitful as I was educated about the varieties of mooncakes available and yet get to experience the learning from the chef himself, Chef Loo.

chefLooSaiWah1

Chef Loo, I will definitely be back to see you again . . . but what I had in mind is to get you to teach me how to make the real Dim Sum . . . even if I need to report to the class at 5am in the morning . . . thank you Chef, SidneyK

Healthy Living, Healthy Eating

no1

These days more and more of us are getting aware about our health and have become more conscious on what we consumer. Therefore healthy living by healthy eating is one way to stay in good shape and by going organic it is a must! Organic Life Café is the place to be when it comes to healthy eating. The food served here is awesomely delicious, unique and creative, something I never thought of having and also organic. They sell organic products too at the end corner of the café which I find them unique and so convenient.

As the day was hot and dry, in order to kill my thirst, I had a glass of Red Surprise fruit juice (beetroot, apple and pineapple) which was so delicious, unique and good for blood circulation. Next is the bright orangy pineapple juice which is good for digestion. I also managed to sip into the delicious wheat grass, apple and lemon mixed juice which is good for detoxing. All for the sudden I was getting excited for the food that was coming!

no5

Now I got to recommend you this dish, so amazing and so beautiful, it is the Hor Fun Roll. It is a flat rice noodle and seaweed roll up stuffed with vegetable served with special home made chilli sauce. The roll was roll up so excellently and I know I can’t roll the way they roll them.

no6

I always have this passion of having beancurd sushi (a japanese beancurd stuffed with japanese rice) and I find it here too but presented in a very different way, they called it “Foo Chok” sushi roll. Yes, very unique with a twist, beancurd pockets stuffed with rice, sweet corn, shredded carrot, pineapple, bean sprouts and a homemade pineapple sauce. It is so likeable and I am definitely a fan of this one!

no7

Next came the golden basket, a simple lightly fried potato basket with diced capsicum, water chestnuts, cashew nuts, mushroom, konnyaku and baby corn. Tasted good but I was longing for more surprises.

no8a

One of my favorite is Mee Siam and without fail, I will visit the kopitiam here but I was surprised that I can have it here too. Taste was good and it was the right type of noodle used. I got to say I did wallop all!

no9

When I saw the next dish, there was a sparkle on my face. It was the broccoli soup, a soup I end up making when I was abroad studying. It had been ages that I had this and what a relief. Now I got to compare mine and this, well . . . of course mine is always superior but I got to say theirs was not far from mine. Good balance of brocolli taste, creamy and the texture was good.

no10

I like this Vietnamese noodle called Sweet and Sour noodle. As you can see there are a lot of great toppings such as shredded vegetables, tofu and also sliced mushroom. The uniqueness lies beneath the toppings, the noodle top with the sweet and sour sauce. We had to mix them all up first before we were able to taste this dish which was so awesomely good.

no11

The pineapple fried rice was good too and I like them to be served on the pineapple so tropical like the do it here!

no12

no13

Claypot ‘Lui Cha’ set is so authentic, I just can fall in love with it so easily, so fresh, so pure and so different. You can see the beautiful arrangement and the unique colours of assorted vegetables and you eat it together with the warm herbal soup.

no14

We end the day with the Viet Spring roll-ups which caught me by surprise. They are so finely roll and so skillful as you can’t see any flawless. This dish consists of delicate rice wrappers filled with vermicelli, lettuce, carrots, cucumber and mint leaves.

Organic Life café is a place to be, the food served here is unique with a delicate taste that suits everyone, what more can you ask for a healthy living lifestyle and healthy eating and yet so organic! . . . . . . . Yours Sidney
