Big Boys Oven Usher in The Year of The Tiger

As for us, Sidney had just upgraded his camera from his Canon to Nikon D90 . . . hahaha this time he had a great time spending his savings but on the other hand producing good photos is a must I guess. As for me I too had been gearing up for this Chinese New Year with some great projects (will tell when the time is right) beside eating around. This weekend my itchy fingers got carry away and ended up sculpturing some sugar paste figurings, I did some tangerings and Chinese wordings to give the Chinese New Year feel and the most exciting part was, I did a couple of Tiger heads for cupcakes and cake decorations.

Itchy Fingers, Funny Characters

This really fun when I managed to get some time playing with my sugar paste. With my itchy fingers, I created a few funny characters for some of my mini cupcakes. I just felt like a happy free five years old kid, creativity without boundaries. Some looks cool and some looks ugly too . . . . :)

This month I will be busy doing some sponsoring such as the up coming Carven Ong’s student graduation, pet’s outing at Bandar Utama Park and a Bridal Pre-Launching . . . . .. . oh yes and Christmas just round the corner too! Just awesome!

It had been a very exciting weekend in Penang as it was my first time to teach my students on how to create a sugar paste wedding cake. “Well, this is nothing new to me”, I told myself with laughter. In fact creating sugar paste cakes was the first skill that I picked up when I got into the baking industry, that was more than 15years ago, and it was at the famous Sunflower Baking Shop at that time.

I usually make my own sugar paste and gum paste and seldom buy pre-made sugar paste as it is cheaper and fun to make. Therefore in the class I decided to teach my students from mastering the fundamental basic till the finished product. Well my students in Penang did so well and had mastered the skill and techniques without difficulty, well they spend a whole day with me but I think it is worth it. :)

Well let me show you what we did during the class and in this session we used a 2 tier dummy cake make out of styrofoam.

Coffee Macaron with Dark Chocolat Fillings

Today, my student Anna Teo came over to pick up her O’chocolat cake and Durian moussecake that she ordered few days ago and brought along three guests, her hubby and two of her adorable children.

Anna said to me when she saw her cakes, “Wow! those macarons are so beautiful, how you do it?”

I told Anna, ” Lots of patients!” and I smiled at her.

We all sat down and chatted for a while and the children was continuing helping me molding some sugar paste, they are so cute and adorable. Here are some of the photos of the macarons that Ann was so amazed with this morning.







That macaron was given a nasty bite by myself so that I can take a photo of it to show you how inside looked like.

Yesterday we had a great time at Lance & Vaneesia’s wedding at the Court Yard Restaurant. I would like to congratulate to both of them a HappyWedding!

A Wedding Cake For A Perfect Wedding

This is a wedding cake I created recently at my studio for a perfect wedding. A 5 tiers pink fondant wedding cake with light pink and purple sugar paste flowers. I had them simple and clean with each tier removable and easy to handle.

A Report on MATCHA!

Last month we did the Matcha baking class! A beautiful and lovely cake with a taste from the rising sun, greentea or called matcha. Firstly we baked the matcha sponge which is soft and full of flavour. Whisking the eggs is essential.



Add the matcha powder to boost up the flavour!



After a few minutes of whisking the sponge mixture is ready to be placed onto the baking tray!




Now it is time to make the greentea mousse!



This are the molds used for assemblying the cake.



Decorated the cake with scrapped greentea cake. Now the matcha(greentea) mousse cake is ready to serve. . . . . . . would you like to taste some, well come and join me on baking exploration this August! . . . . Love Sunny Yaw

Double Chocolat Cupcake

Well at the moment I think it is still cupcake crazz time and down the coming few months, definitely will be the macaroons carzy!!! But I love both of them, cupcakes always have a sentimental value as each of the cupcake looks so different and look so unique and can be very artistic. As for macaroons, it is another story. It is not only about artistic but all about skill and technique. Macaroons from different shops taste differently. Oh I love them both, cupcakes and macaroons. Macaroons tend to taste very sweet and difficult to reduce the sweetness but cupcake can. I always reduce the sweetness of my cupcake by reducing icing sugar and even sugar paste and replace them with chocolat, chocolat ganache and cream.

Recently I had baked some cupcakes for a client, a new training agency in town. So we baked a double chocolat cupcake, hmmmm……yes teckiee they are really delicious indeed, you miss them again……………..lol. Anyway since none of this cupcakes left, here is the recipe to bake some.

Chocolat cake mix

200g dark chocolat
200g butter softened
6 eggs
200g sugar
150 cake flour, shifted
100g dark chocolat chips

To prepare cake mix

Melt the chocolat and butter in a double boiler. In a mixing bowl with the ballon whisk attachment, beat the eggs and sugar together on medium speed until the ribbon stage. Add the melted chocolat and butter and mix well. Using spatula, fold in the sifted flour. Place paper cupcake cups into baking moulds. Line the cupcake cup with chocolat mix and add dark chocolat chips. Bake in a preheated oven at 160C for 13minutes……. Remove from oven, set aside to cool completely before decorating with chocolate gancahe and cream cheese.

Chocolat ganache

400g dark chocolat, chopped
400ml cream
50g butter

To prepare ganache

Place the chocolat in a mixing bowl. Warm the cream and pour unto the chocolat. Stir with a wire whisk until smooth. Add softened butter and whisk until smooth. Cool in the refridgerator until it can be piped.

This cupcakes looks lovely and taste rather not too sweet. Yet another batch of cupcakes well executed. It is worth trying to make some over the weekend, you will definitely like it.

Where is the mermaid?

Before taking a shortbreak, I spend sometime wandering on what should I do with the chocolat moulds that I have. There are so many of them inside the box but what caught my eye was the seashell moulds. I had not give them a try yet and are still brand new. Therefore instead of making chocolat seashell, I decided to mould some sugar paste. I also moulded an angel with a pair of wings. With all these seashells and angels, I put them onto the fondant.

Once completing assembling them, they look so cute but the surface of the cake now looks rather empty. So I decided to make a mermaid as the centre piece of the cake and it turnout to be interesting and yet beautiful.

I also sprinkle some coloured icing sugar to make it look colorful. I hope you like this piece.
