Craft Your Own Prince Hotel White Coffee Baked Mooncake

10 Prince_Freshly_Baked_Moon_Cake

Lunar worshiping and moon watching are part of the ritual during the night of the celebration day while mooncakes are offered between friends and even during family gatherings. The 15th day of the 8th Lunar month happened to fall on mid September this year and the Mid-Autumn Festival or “Zhongqiu” Festival will be celebrated. Mooncake was treated as luxury when I was a child and my dad will make sure we will have a least a box for this special occasion. We the kids we jumping up and down with joy when the mooncake was sliced and looking at the golden orangy salted duck egg yolk was just a glowing jewel with dismay.

New Orleans Food Festival Eccucino Prince Hotel

Mardi Gras

Once again I got to try yet another cuisine that I always wanted to try which originated from the New Orleans. I heard and watched about on the telly especially during the Top Chef TV series as some of the chefs were cooking the dishes made famous from New Orleans. I was amazed and all this due to the pain saking and hard work of Executive Chef DJ Pezar and his team of cooks! I was told that it was all the recipes from Chef DJ Pezar himself, just fantastic. This New Orleans food Festival starts from 4th to 14th February 2010.

Mardi Gras 1

New Orleans cuisine is a style of cooking originating in the State of Louisiana (centered on New Orleans), U.S.A. which is a melting pot cuisine that blends French, Spanish, Caribbean, Mediterranean, Southern American, American Indian, and African influences. New Orleans cuisine can be divided into two types: Creole and Cajun. What is the difference between Creole and Cajun cooking? The easiest way is to think of them as city and country cooking.

Many Creoles were rich planters and their recipes came from France or Spain as did their chefs. By using classic French techniques with local ingredients, they created a whole new cuisine, Creole cooking. This is much more prevalent in the cities. On the other hand, the Cajuns were a tough people used to living under hard conditions. They tended to serve strong, rough country food prepared from locally available ingredients. Thus Cajun cuisine was born in the swamps and bayous of the countryside. While both cuisines are distinct, there are similarities. Rice is a staple of both, they tend to be spicy and Creole and Cajun chefs usually start a dish by making a roux of oil and flour. In addition, there are many common ingredients such as crab, shrimp, oysters, crawfish, freshwater and saltwater fish, plus wild turkeys, ducks, homemade sausages, chilies, beans, tomatoes, okra, yams and pecans.

Boiled Crawfish

Some of the signature dishes of New Orleans were featured at Eccucino and they were Gumbo, Jambalaya, Shrimp Etouffee, Boiled Crawfish, Blackened Fish and Bread Pudding. I was excited especially with Gumbo as I heard everyone in America talking about it! Truly exciting!

“Yee Sang” or ” Lou Sang” had been ever popular in Malaysia since I was young and now it had been a norm in every Chinese New Year dinner, just awesome. This popular dish consist of variety of mixture of thinny sliced fruits, vegetables, crackers topped with sliced raw fish and drizzled with spices and sweet fruity sauce, I would say it is a typical salad but prepared in the chinese way.

This time Tai Zhi Heen offered the Tuna and Salmon Roulade “Yee Sang”, gorgeous I would place it. I was beautifully prepared, attracive colours.

If you want to have a bowl of a tip top broth, I would recommend you to order a bowl from Tai Zhi Heen, I had one and it was superb! It was the well double boiled superior broth that made it so special and delicious. Here, the broth was presented in a attractive golden in colour. The taste was done to excellent, while the fish maw was soft and tender, just perfect.

La Dolce Vita with Castello Banfi at Tai Zi Heen Prince Hotel

castle

Castello Banfi is a family owned vineyard estate and winery in the Brunello region of Tuscany. Together with its sister estates in Piedmont, Vigne Regali and Principessa Gavi, it has become recognized the world over for its dedication to excellence and sparking a renaissance in the art of Italian winemaking. The Mariani family proprietors credit education, dedication and discipline for the success that has accorded honors including:

11 Consecutive Years ~ Italy’s Premier Vineyard Estate at the VinItaly wine fair.

The first winery to be internationally recognized for exceptional environmental, ethical and social
responsibility (ISO 14001 and SA 8000) as well as an international leader in customer satisfaction (ISO 9001:2000).

Winery of the Year by both Wine Enthusiast and Wine & Spirits Magazine and Top Ten Wines (Castello Banfi Brunello di Montalcino Riserva Poggio all’Oro) by Wine Spectator.

Perhaps most gratifying of all is the praise of neighboring vintners who acknowledge Banfi’s role in pioneering a new era in Brunello and bringing the wine world’s attention to Montalcino. Banfi has pioneered clonal research on the Sangiovese vine to produce a more consistently excellent Brunello di Montalcino, and reduced sulfites and histamines through more organic winemaking. Technological advances, including customized cooperage for more balanced wines, nitrogen bottling to eliminate the addition of sulfites, electrodialysis to allow flavors to emerge, and development of fermenters that combine both stainless steel and wood, are balanced with a profound respect for tradition and deep expression of the local terroir
and microclimate. In the end, at Castello Banfi, winemaker and nature partner to allow the wine’s natural pedigree to emerge in artful expression.

Though savoring these achievements as they would a glass of their finest vintage, family proprietors Cristina Mariani May and James Mariani are hardly resting on their laurels. In the continual pursuit of superior quality ingrained in them by their fathers, Castello Banfi cofoundersand brothers John and Harry Mariani, they work constantly to improve upon every detail, from winemaking and packaging to the estate’s renowned hospitality.

The Marianis established Castello Banfi in 1978, assembling a contiguous estate of 7,100 acres (2,830 hectares). A constellation of single vineyards spreads out to cover only 1/3 of the property, starting with the undeniable concept that quality is determined first and foremost in the vineyard.
