Braised Whole Boneless Pork Knuckle

Over the weeks I had been wanting to cook a whole pork knuckle and I at recent I managed to have it prepared with my Philips pressure cooker. I came to know this whole pork knuckle dish gained some interest with foodies in Taiwan when many knuckles are prepped per evening for some restaurant and some were sold out most night. It takes hours to prepared over the gas stop but pressure cooker had shorten the time.

Pickled mustard soup had been playing in my head for ages and this time I got the chance to make one. My parents usually used roasted pork bones as the protein for this type of soup but I preferred a more refreshing sweet in taste, therefore I used red snapper instead. Here I had the fish portioned, cleaned and deep fried to give the broth a better bolder taste and a better biting fish texture.

I love this dish, it is really nice especially with the present of the aroma of taucu bean paste. I cooked this dish using the pressure cooker and found the sauce retained inside the pot. Therefore I would recommend to reheat it on the stove to reduce the sauce (to thicken the sauce). I think it will be even nicer. The sauce from the pressure cooker itself it also damn tasty too. Another good dish executed perfect, nearly there . . . . . . Sidney Kan
