I am back for another two macaron classes at BBO Studio this June. Yes I had been busy baby sitting my nephew and niece during this early June. I will also be having the delicious soft and tender Mille Crepe class and not forgetting the fabulous dark chocolate Banana Gateaux class. whish I had during April. As for July I will be lining up some Gourmet Cake classes so do stay tune for them.

Vanilla & Chocolat Cookies

Yes I always end up having a lot of egg yolk after my macarons session. There are many way to use them such as steam egg yolks with soya milk which is awesome delicious or even egg pudding would be a great idea. Usually I like to use my left over egg yolks to make my favourite cookies. Here is my favouritevanilla and chocolat cookie recipe which I would like to share with you . . . . .


150gm Butter
100gm Sugar
250gm Cake Flour(sifted)
2nos Egg yolk
a drop of Vanilla essense

Option al
For cocoa cookies
50gm Cocoa powder(sifted)
200gm Cake flour (instead of 250gm)


1. Whisk butter and add sugar.
2. Whisk till the mixture turn white.
3. Add egg yolk gradually and continue whisk.
4. Add in cake flour (cocoa powder) and whisk.
5. Roll the mixture into a roll dough.
6. Wrapped it with baking paper and freeze it.
7. Preheat oven at 160C
8. Take the frozen cookie dough and slice the dough about 8mm thick.
8. Bake for 15-20mins


The batch of cookies that I baked was crispy and delicious, my nephew and niece were so addicted to this cookies as they keep wanting more. It is worth trying this cookie recipe as they will go very well with your guest over a cup of smooth coffee. Happy baking

I have been baking macarons lately and alway end up with a lot of egg yolk. What do you usually do with them?

Chocolat Mousse

Last previous post was a strawberry moussecake and today I decided to post a simple not difficult and straight forward chocolat mousse for individual portion. My little niece love this chocolat mousse so much that she always look forward for one for herself to endulge so sinfully! She always looks forward to see me as I alway have surprises for her.

Chocolat Mousse
Whipping cream 280gm
Melted dark chocolat 100gm
Hazelnut syrup(Monin) 15ml
Egg white 50gm
Granulated sugar 35gm
Gelatin leaf 3envelopes
Inner layer
Sponge cake

Make the chocolat mousse, whisk egg white until foamy. Then, add in granulated sugar gradually and whisk until soft peak form.
Whisk whipping cream and gradually add in hazelnut syrup until soft peak form.
Melt the dark chocolat and pour it in the whipping cream and fold well witha rubber spatula.
Fold meringue into chocolat mixture and gently fold well.
Pour in metled gelatin into the chocolat mixture and gently fold.
Pour a half layer of the chocolat mousse into the round plastic ring and refrigerate for 1 1/2 hours.
Inner layer, place a piece of spoge cake.
Pipe in another layer of chocolat mousse.
Then placee in freezer for an hour.
Finish the surface with melted chocolate.

The Doraemon

My little nephew “Phong Chai”

Kids love him, my niece adores him, my nephew takes him home…. so do the adults, they all adore and want him. Funny, intelligent, cute, naughty and so full of characters. When you see him, you really feel so happy and so fulfill. He is doraemon!!!!!!

It was last week that I got a call from Zsarina informing me that her sons adored this japanese cartoon character named doraemon. She wanted a doremon figuring on her son’s birthday cake, just like the doraemon cartoon as what you see above. With the picture I started creating the figuring and as I was about to put the final touch, my kid nephew, “Phong Chai” came sitting on my lap and wanted to put his signature onto this figuring and this was what we end up having……. woah! Phong Chai’s doraemon, the best doraemon that I ever see and will be one of my collection………… lol! Phong Chai was playing with his new found friend almost the whole day and admiring his creation too

As not, to really really upset Zsarina…….I did another doraemon figuring,….. ain’t he look adorable.
