January 2011 Wedding Cake Collection by Sunny Yaw

This is awesome as having no time on my hand, I managed to come out with a few newly sculptured wedding cakes for my 2011 collection. This one is just a glimpse of my current and 2011 wedding cake designs. I will be playing with macarons and ribbons for my current half year collection. Yes I still can’t stay was using my piping techniques which I incorporated on this desgin. I kept it apple green and with bursting orangy which I think it can be truly trendy! Macarons! macarons! I love macarons.

At this moment I am working on a huge macaron wedding tower for this weekend’s wedding, for a lovely couple flying back from Melbourne. It will be exciting and I hope I will bring the beauty of the macaron tower to a new level! I just love it! but it may not be your cup of tea! My thoughts had change recently and flurish with great ideas, thanks to Dato’ Jimmy Choo.

I had been truly busy with Christmas desserts and now focusing getting some Chinese New Year cookies ready for the awesoem auspicious celebration! As for January I am glad that I am able to have a macaron baking class. Yes only one class for this January 2011. I was informed that my coming Feb baking class will definitely be packed. :) Yet another exciting thing to watch this 2011 will be the BBO baking classes workshop expansion! Yes it gonna be fabulous, just need to hold on a bit and we will let you know very soon!

Wai Sik Mui Indulged New Zealand Ma Cherie Macarons

Ever since my trip to Paris this year, I have been addicted to macarons. These lovely goodies are not only cute and pleasing to the eye, they are little bites of happiness in the mouth too. Since my return to Auckland I had been searching around for some authentic macarons and months later, I’ve found them!

Not only that, I was lucky enough to meet Pastry Chef and owner of Ma Cherie, Guillaume Nicoli who happily agreed to show me how macarons are made. Double joy!

Guillaume is a French patissier with over 15 years of experience, having worked for top-ranking French maestro Thierry Mulhaupt in Strasbourg and at the famous Fauchon in Paris. When he moved to New Zealand, he brought along his expertise in macaron-making. Ma Cherie was born out of Guillaume’s passion and expertise in fine French pastry making. Ma Cherie supplies fine French pastries to a number of cafes in Auckland. Macaron Trees and Croquembouche can be made to order by Ma Cherie for weddings and events.

I meet up with Yasmyn at my studio this afternoon to embark for some macaron baking. In fact Yasmyn flew in from Melbourne with her mum Nancy for a short holiday. Before hand Nancy got in touch with me through facebook. Yes facebook, it truly connects people around the globe, just awesome isn’t it.

Yasmyn is only nine years old and she is my youngest student and yet the most charming one, she can really bakes. She handles her baking steadily, she weighs the ingredients, whisks, mix, pipe, bakes and assembles them. She can also take photos using her DSLR Nikon camera.

Hmmm….. I guess I had not been baking any new cakes lately, not because I had been lazy but I guess I had been very tied up with my work. I hope you will accept my thousands of apologies. I just nearly completing my baking tour and it was fun to meet so many learners in Johor Bahru, Singapore and Penang centres. Yet there is another great news, I will be baking (confirmed) in Ipoh this coming August, the schedule will be out soon.
