A Chinese New Year Gathering at Flavors Swiss Garden Hotel

It had been a prosperous year 2011 and I had been invited to taste those beautiful dishes. Like last night Julia had invited me “Loh Sang” with her close friends. It was a fabulous night. Thanks Julia! There I was at “On the Table” meeting up with owner & Chef Riz! It was an awesome beautiful and well decorate restaurant. The Loh Sang was splendid! So creatively prepared! I will tell you more later on my facebook!

Yet I also attended another fabulous gathering with people from the media, journalists and bloggers at Flavors, Swiss Garden Hotel. We had a fabulous Loh Sang, this time it was different, we all were gathered to a long table and we toasted the Yee Sang! It was awesome, filled with such joy and laughter! What’s more, we had great company!

Everyone Connects Turn One

Last Sunday, TM Everyone Connects celebrated turning one at the Curve Centre Court and it was an awesome afternoon with music and whole lots of fun activities. A year ago they celebrated with the largest mass sing along karaoke for Everyone Connects but this year they had the boys from Bunkface to grace the centre stage. It was fantastic! :)

Here is a quick intro about me if you have never heard of me before ‘I am Norman Musa, a self taught chef born in Butterworth and now resides in Manchester, UK. I am the Executive chef and co owner of Ning Restaurant in Manchester,UK. This year I was selected as Lotus Formula One Official Malaysian Chef to travel around the world with the Lotus team to cook for the like Tony Fernandes, drivers and whole team. Last year I was a finalist for Chef of the Year Award and also finalist for the Restaurant of the Year Award. I also self published my cookbook titled ‘Malaysian Food’ edited by my business partner, Andy Spracklen marketed in UK, Singapore and Malaysia. Together with Malaysia Kitchen campaign, we are working hard to promote Malaysian food in the UK. Hey! I am back! yes I had been away and had spend a great valuable time in Taiwan. Well it was a holiday and see see for me and I took my mum with me too. It was an explosive to visit, lovely Taiwan and enjoyed the variation of awesome goodness of Taiwan cuisine.

Now I am back with full of energy and loads of work to be done! I know I had been rather quiet and had been behind the scene relaxing lol! Anyway, there will be some changes and soon really be implemented, more new baking class and I will be showcasing more varaition of cakes and recipes here on www.bigboysoven.com, meaning you will see more of me! As for food, we will be setting up another webpage called food.bigboysoven.com and Sidney Kan will be penning down his food excursion!

Lovely Tiramisu & My Tiramisu Class | Big Boys Oven in Penang

Tiramisu is one of the most popular italian cakes and I just adore it, I have them my unique way, layered with lady finger biscuits but I have my with my sponge cake dipped with espresso or a strong coffee and layered it with a whipped mixture of egg yolks, mascarpone with my favourite liqueur. As for this one, I decorated it with hazelnut white chocolate macarons and chocolate bits.

RECREATING JERRY & PEI WERN’S WEDDING CAKE | SUGAR PASTE CLASS

It had been a very exciting weekend in Penang as it was my first time to teach my students on how to create a sugar paste wedding cake. “Well, this is nothing new to me”, I told myself with laughter. In fact creating sugar paste cakes was the first skill that I picked up when I got into the baking industry, that was more than 15years ago, and it was at the famous Sunflower Baking Shop at that time.

I usually make my own sugar paste and gum paste and seldom buy pre-made sugar paste as it is cheaper and fun to make. Therefore in the class I decided to teach my students from mastering the fundamental basic till the finished product. Well my students in Penang did so well and had mastered the skill and techniques without difficulty, well they spend a whole day with me but I think it is worth it. :)

Well let me show you what we did during the class and in this session we used a 2 tier dummy cake make out of styrofoam.
