This 8th August, Sunny Yaw will be hosting this event and together with Mrs HT Wong, they will be sharing some of their baking secret with you. Both very experience and talented chefs and will be embarking into the journey of vegeterian, understudying the Citrus Nutty “Ng Yan” mooncake and cake making.

We have tasted the first batch of this mooncake at Mrs HT Wong R&D kitchen in Ipoh. They were awesomely delicious and full of aroma, infused with dry pumpkin, lots of almond nuts, sweet ginger and many more hidden ingredients that you will learn in this class. It was at the right sweetness, less sugar and suitable for the young and old. In the second session Sunny Yaw will share his experience with you on the making of a vegeterian dessert!

Indulge With The Matcha Goddess

I am back safely in KL from my Penang weekend trip. Although I am too exhausted but it was one of the most interesting trip that I ever had. I counducted 3 classes on the weekend, it was fantastic and had great students and will post about it soon. Food in Penang as always delicious and incredible.

Today I am posting about the greentea tiramisu, layers of greentea cream over layers of japanese greentea sponge. This greentea tiramisu is gorgeous as I served them in a beautiful tappered glass and even decorated it with chocolat and fresh fruits.

Terence & Pei Ming’s Wedding Cupcakes . . .

We meet Terence, Pei Ming and Amanda at our place few months back to discuss their wedding cupcakes and last month Terence & Pei Ming had their wedding dinner at Imperial Sheraton Hotel Kuala Lumpur. 400cupcakes were ordered for their wedding day while 30cupcakes were placed on the tiers at the stage and the rest was packed nicely in a cupcake box for the guests to take home after the wedding dinner.

As Terence and Pei Ming wanted a simple pink cupcakes and I baked them chocolat, vanilla and greentea cupcakes and swirled with pink butter cream. The cupcake tiers were beautifully arranged with champange glasses, beautiful maroon coloured ribbons and scattered with rose petals.

An ENTRANZE into A Real Japanese Fusion

We were back again at Entranze for a full lunch, this time we make sure we ordered our food from their menu so that we were able to taste those spoke about dishes.

The first thing I ordered was their Grilled Salmon Fish Head with Teriyaki Sauce. I loved this particular part of the fish especially those, Salmon and Garupa. The Salmon fish head served was awesome, no fishy smell, and yet the texture of the meat was firm and went well to my liking. The grilling was perfectly done and sure able to taste the present of sake and black pepper, so well marinated. While pricking into the fish with the pair of chopstick and dipping it into the terriyaki was such an awesome experience, it just melted in my mouth with the unique taste of the terriyaki.

Next came this dish called Gyu Shoga Yaki (Pan Fried Beef with ginger sauce with japanese onions). The beef was thinly sliced and stir fried. The taste was good, simple and with an influence of Chinese.

We also had pan fried chicken with chef’s special made sauce. It was gorgeous but I got to say I was so into their side salad as it was very awesome delicious.

Yet another well prepared yasai tempura (vegetable tempura). The vegetables were deep fried till crispy and sure had won my heart, we just can’t get enought of it.

Gosh I spotted this . . . yuzu liqueur, it was awesome, low in alcohol but the taste of yuzu was not as strong as I would prefer but still taste fantastic.

These homemade ice creams were a real knocked out, they were such a babe, there were Ms Kurogoma(black sesame), Ms Shirogoma(white sesame), Ms Matcha(greentea) and Ms Wasabi. They tasted soft, creamy, less sweet and something I would love to take home.

Wow! We get the chance to meet up and chit chat with the Chef himself who had prepared our lunch, it was an honour, thank you Chef Tony Wee of Entranze.

This is a place I will be back for more!

Sunny Yaw at Ole Cafe

Dear friends, readers and bloggers,

At last and for the first time Big Boys Oven is officially able to feature the work and patisserie of Sunny Yaw at Ole Cafe. Sunny Yaw is a talented baker. He is only 36years old and started as an apprentice at the age of 20. He had been working with numerous cakeshop in KL such as Sunflower, Berry, B2B and Bread Story. After a lot of persuading and support, he left Bread Story in July 2007 and joined Big Boys Oven. He is also one of the co-founders of Big Boys Oven.
Sunny Yaw had prepared the following and can be found exclusively at Ole Cafe this friday(10August):

Red Ruby
Noisette (hazelnut) flavoured baked pure cream cheesecake, top with baked fresh cranberries. It comes with an oreo and rice crisp base.

O’Chocolat
Chocolat mousse cake is embedded with a hint of orange peel and covered with infused orange senguine (blood orange) syrup ganache. The mousse cake is decorated with a roasted walnut and a piece of chocolat.

Catherine
A tarte pistachio infused with fresh cranberries. Top with fresh rasberry merigue and fresh cranberries.

Les Choux
This huge choux comes with matcha (greentea) or vanilla cream.
