Last we I was invited to have a One to One session with Dim Sum Master Chef Low Kim Ong and we were both rather nervous at start as I expected more tasters be joining me. Surprising, myself, my invited guest and my inviters had a cosy table set near the window with a fabulous Sunway Lagoon view at the restaurant. The lunch Dim Sum here at West Lake Garden had an interesting change of setting, they are moving into all time traditional Dim Sum setting, more casual with Dim Sum carts and a showcase of live cooking. One can witness claypot cooking while Dim Sums take on the bamboo steaming. It was a fabulous lunch for me, it was busy and filled with great sight and sound backdrops with more than 100 variation of Dim Sum at your service. How can one like myself resist such temptation.

Hunting for a good dim sum during this Chinese New Year, no need to go far on the hot trail in finding one, at recent I have tasted a few fabulous onces likethe Ti Chen where Dim Sum Maestro Yau Kim Yew creates fantastic petite gourmet which is also halal. But if you are looking for a great rustic feel backdrop with cart-away dim sum, I would invite you to gourmet the Xin Cuisine Concorde Hotel Kuala Lumpur with Chef Loong. His creation is back to basic yet packed with wholesome creation. my favourite is his fish balls. Another place that is also very much sort out would be definitely the halal dim sum at Luk Yu Tae House at Starhill Gallery. I love the dim sum served here is wholesome.

Another exciting Dim Sum Restaurant that any dim sum intuition must taste would be at Ee Chinese Cuisine Eastin Hotel Petaling Jaya. The dim sum here is much sort after and truly an exciting cuisine excursion. Even having a bite of it’s luxurious Chinese Chives & Prawn Crystal Dumpling can be so divine, so delicious.

According to the Chinese zodiac, people born in the Year of the Horse are active, energetic, charming and cheerful. So we foodies got together and had a toast ritual of Yee Sang at Si Chuan Dou Hua Parkroyal Kuala Lumpur and house fruit Yee Sang platter greeted us with such as style, fun and fostered our friendship. Yes it was truly terrific!

Yes Chef Ng Meng Loong is known for creativeness and also maintaining the taste and flavor of his Dim Sum. His Dim Sum is a morning gourmet to die for and I was lucky to be able to taste his handmade Dim Sum creations.

Over the weekend I attended a lunch Dim Sum at EE Chinese Cuisine located at Eastin Hotel Petaling Jaya. Before I start rambling over the food, I got to confess it was a fabulous DIM SUM experience of taste and craftmanship. Everyone was raving about it as far as I know, especially those sitting right and left from my seat. It was definitely a rave as I would put it, ” Premium all you can eat dim sum at RM48++ per pax is denifitely a great bargain”.

Yup! I am back in Ipoh for Chinese New Year. Reunion dinner is important and I hope everyone gets to dine with their love ones. This year again we are back at the Oversea Restaurant for another splendid eight course dinner. The food this year still maintained well, not bad at all.

Having dinner with my mum’s family is a yearly thing without fail. Everyone is back from their places, a cousin of mine was back with his family from Kota Kinabalu, another family came back from Johor and so was sister back from Singapore. As usual we started toasting the Yee Sang, it was very traditional and simple Yee Sang with slices of fresh water fish.

Teochew Cooking with Master Chef Tony Gao, Guangzhou – Series 3

Master Chef Tony Gao from Guangzhou, China is an authentic Teochew cuisine chef with more than 20years of experience and started cooking at the age of 17years old. His appreciation for pure, simple and fresh ingredients is translated into delectable signature dishes that he carefully prepares. Currently he is a visiting master chef at The Mandarin Oriental Hotel, Kuala Lumpur from 1st till 10th May, 2008.

Broth

TAI JI VEGETABLE BROTH

Ingredients

700gm Sweet potato leaves or spincah leaves
2kg Superior chicken stock
200gm Minced chicken
50gm Chicken Ham
100gm Superior potatoes starch

Method

1. Blanch the spinach leaves for few seconds then chill in ice water.
2. Heat up some chicken oil and wok-fry the vegetables until fragrant. Set a side.
3. Blanch the minced chicken. Set a side.
4. Seasonthe superior chicken stock with remaining ingredients under medium heat. Add the vegetables. Gradually add the superior starch that has been mixed with water, slowly untilthe broth thickens.
5. Lastly add shredded chicken and ham, simmer for a while and serve in individual bowls.
