I had a great lunch and this time I was able to indulge Chef Chan Chong Yen’s lastest Chinese creation at Toh Lee. As the head chef, Chef Chan is known for his artistic and creative in his food direction while insist of freshness and finest in his ingredients At the restaurant that noon we had the pleasure to try out some of his creations from two of his oriental 6-course set lunchess Each set comprised of a starter, a soup, three main courses and a dessert. It is definitely a perfect feast.

I am back safely in KL from my Penang weekend trip. Although I am too exhausted but it was one of the most interesting trip that I ever had. I counducted 3 classes on the weekend, it was fantastic and had great students and will post about it soon. Food in Penang as always delicious and incredible.

Today I am posting about the greentea tiramisu, layers of greentea cream over layers of japanese greentea sponge. This greentea tiramisu is gorgeous as I served them in a beautiful tappered glass and even decorated it with chocolat and fresh fruits.

Tarte Fruit


It had been a busy week and the good news is, we are going to feature the work of chef William T (Singapore) on Big Boys Oven. I am sure it is going to be a very exciting and just can’t wait to see chef William T’s creation soon

For this week, I decided to put up a very simple tarte fruit as the ingredients are found in my fridge. Fresh fruits, sponge cake, strawberry cream, strawberry syrup and tarte shell. I started to assemble this tarte fruit by piping the strawberry cream onto the tart shell. Place a sponge cake on top of the strawberry cream and brushed some strawberry syrup over the cake sponge.

Once the tarte based is completed, the fresh fruits are arranged according to your liking. Lastly applied apricot glazing on to the fresh fruits as to bring the creation to life.

Do try this, it is simple, fast and yet gorgeous.
