When I saw ISSAYA SIAMESE CLUB Bangkok’s Massaman promotes it’s Lamb Shank on facebook it got me excited. Well I just love the food creation at this gorgeous restaurant located in Bangkok. Yes I had tried them out early quarter of this year and their food is just absolutely delicious. Chef Ian ‘s unique 10 hours slow-cooked Massaman Lamb Shank looked so perfectly. By looking at it you know you want to taste it and I will when I get to Bangkok. Looking through my little library I found a Massaman recipe hidden in the Blue Elephant Cookbook and I decided to give it a try. I recreated the Massaman paste but I improvised on the lamb shank as their was cooked with diced lamb.

Baked Lemongrass Chicken Wings

Having to be around at home with plenty of ingredients tucked away in the cabinet, fridge compartment and also the freezer can sometimes be very exciting. Saw what I had. Interesting? . . . . .definitely, a big bunch of lemongrass bought from the night market at Chow Kit definitely got me excited while a packed of chicken wings will definitely to solved any hungred poor living souls at home like myself.

I was totaly convinced it was really good when I saw the way he cooked, Executive Chef Michel Karam. He was truly loveable, a man with great dedication in creating his food. He maybe huge in persone but he was a soft spoken person when it came to conduct his cooking classes. Spoke with a great flare and a slight tongue twisted French accent. Nice.

I had been having a great time over the weekend although I have been struggling for time. I have been baking macarons with a great group of students of mine, some budding up coming young chefs from UITM, some were excited baby bakers and some got too interested yet excited with macarons. All of them did very well and all the macarons baked was a success, non cracks, all just perfect! You gals were awesome, now I am waiting with less stress for their home results, gosh! I am already excited, definitely my mobile and email will be flooded this coming weeks, and I hope not! :)

I was also had been busy sculpturing a two tier 50th birthday cake which came out to be gorgeous it was finished with black and red in colour. The feedback was truly positive, they like it! Then I had an australian cafe food excursion near my place and it was awesomely gorgeous. I truly love the burgers and salad yet it was so affordable. I can’t give you much details of it as Sidny will be reviewing it on his food blog soon.

COGNAC CHOCOLATE, RICH CHOCOLATE MOUSSE WITH COGNAC BAVAROIS | BIG BOYS OVEN SWEET DESSERT

This round I decided to be rather more adventurous as i wanted to do something out of the box, something unique, something tasty , something different from my regulars and something appealing, and the creativeness of Chef Titan Tsang had attracted me. Not only his good looks that magnetified his audience but the way he picked his ingredients had attracted me to explore his next recipe . . . . . Cognac Chocolate, a rich chocolate mousse with incredible intensity of cognac bavarois layered over a delicious hazelnut dacouoise and finished off with fully flavoured of craquelin. Now come and join me on my sweet exploration which begins now . . . . . . . . .

COGNAC CHOCOLATE 3

HAZELNUT DACQUOISE

Ingredients
180g Egg white
90g Caster Sugar
80g Ground Hazelnut (toasted)
125g icing sugar
30g Soft flour
Some diced hazelnut

Method
1. Sieve soft flour and mix with ground hazelnut, almond and icing sugar.
2. Whisk the egg white and gradually add in sugar and whisk until stiff.
3. Fold in dry ingredient.
4. Sprinkle icing sugar and diced hazelnut.
5. Bake in convection oven at 180C about 10 minutes.

Ingredients

(A)
4nos Egg white
130gm Sugar
pinch of salt

(B)
120gm Flour
30gm Rice flour

(C)
50gm Pistachio
100gm Walnuts
100gm Almonds
60gm Glace ginger

Method

1. Whip (A) till stiff. Add in (B) and mix till well blended.
2. Add in (C) and mix till well incorporated.
3. Pour it into a greased annd lined loaf tin. Make 2 loaves (17x8x6cm)
4. Bake at 175C for 40minutes.
5. Let it cool and then keep in the freezer for 6hours or more.
6. Cut it into thin slices about 2mm thick.
7. Bake it again at 150C for 15minutes or till crisp.

Chocolat Mousse


Chocolat Mousse
Whipping cream 280gm
Melted dark chocolat 100gm
Hazelnut syrup(Monin) 15ml
Egg white 50gm
Granulated sugar 35gm
Gelatin leaf 3envelopes
Inner layer
Sponge cake


Make the chocolat mousse, whisk egg white until foamy. Then, add in granulated sugar gradually and whisk until soft peak form.
Whisk whipping cream and gradually add in hazelnut syrup until soft peak form.
Melt the dark chocolat and pour it in the whipping cream and fold well witha rubber spatula.
Fold meringue into chocolat mixture and gently fold well.
Pour in metled gelatin into the chocolat mixture and gently fold.
Pour a half layer of the chocolat mousse into the round plastic ring and refrigerate for 1 1/2 hours.
Inner layer, place a piece of spoge cake.
Pipe in another layer of chocolat mousse.
Then placee in freezer for an hour.
Finish the surface with melted chocolate.

Last previous post was a strawberry moussecake and today I decided to post a simple not difficult and straight forward chocolat mousse for individual portion. My little niece love this chocolat mousse so much that she always look forward for one for herself to endulge so sinfully! She always looks forward to see me as I alway have surprises for her.



Chocolat Mousse
Whipping cream 280gm
Melted dark chocolat 100gm
Hazelnut syrup(Monin) 15ml
Egg white 50gm
Granulated sugar 35gm
Gelatin leaf 3envelopes
Inner layer

Strawberry Moussecake with Flaming Meringue

“> Strawberry Moussecake
(prepare 3 of 3 inch cake ring)

Strawberry mousse
Whipping cream 280gm
Melted strawberry puree 100gm
Strawberry syrup(Monin) 15ml
Egg white 50gm
Granulated sugar 35gm
Gelatin leaf 3envelopes
Inner layer
Melted strawberry puree 70gm
Gelatin leaf 2envelopes
Outer layer (Meringue)
Egg white 100gm
Granulated sugar 30gm

Make the strawberry mousse, whisk egg white until foamy. Then, add in granulated sugar gradually and whisk until soft peak form.
Whisk whipping cream and gradually add in strawberry syrup until soft peak form.
Melt the strawberyy and pour it in the whipping cream and fold well witha rubber spatula.
Fold meringue into strawberry mixture and gently fold well.
Pour in metled gelatin into the strawbery mixture and gently fold.
Pour a half layer of the strawberry mousse into the cake ring and refrigerate for 1 1/2 hours.
Inner layer, melt the soften gelatin into the hot strawberry puree, let cool until 30C. Then place a spoonful of the strawberry puree on the centre top area.
Pipe in another layer of strawberry mousse.
Then placee in freezer for an hour.
Outer layer, whisk egg with until foamy, add in granulated sugar gradually and whisk until stiff peak form.
Pipe the meringue along the cake edge. Burn the meringue with a culinary torch and freeze it for 15 minutes.

My First Serious Baking

I just really can’t wait till 1st June and better get it done now.

Till now I still wonder how this baking passion got started. Now I remember, it was when I exchanged my bonuslink points for a Faber cake mixer and next came a new Zanussi electric oven. After a couple of months, as the portion get bigger so does the mixer and end up having a Kenwood major classic mixer, a big freezer and a chiller.

I have this huge interest and bit thingy about cheesecakes. Not sure why but I guess it might be the hunger for a piece of thin crust and top with huge thick aroma soft creamy cheese. My first cheesecake writer that I came across is Mary Crownover and she is a real knockout. After doing an extensive reading on her books, I decided to embark on baking a cheesecake with a local flavour.

I would call it “Gula Melaka Pecan Oreo Cheesecake”. For the crust, crushed Oreo biscuit, pecan bits and butter are being used. As for the thick creamy topping, whisk cream cheese, gula melaka, eggs, corn flour, sour cream and fold in whisked whipping cream.

This cheesecake looks great and refreshing. The beautiful brown creamy cheesecake with dark Oreo crust will make you love it. The aroma smell of the gula melaka and toasted pecan gives me the fondest memory of little town Melaka.
