NYONYA BREEZE Penang Finest Nyonya Cuisine

Nyonya Breeze located at Abu Siti Lane is yet another delicious nyonya heritage gourmet that not to be missed if you are in visiting the Penang Island. Upon the invitation of Uncle Lee, we headed to Nyonya Breeze right after our baking class ended.

According to my google search, six centuries ago, China’s Ming Dynasty began courting the kingdoms to the south, dispatching Admiral Zheng He on his seven epic journeys, during which he made port in Malacca and Singapore. To cement budding diplomatic and commercial ties with the kingdom of Malacca, the Imperial Princess Hang Li Po was married to Sultan Mansur Shah, the Sultan of Malacca at that time. Her entourage settled in Bukit Cina, marrying the local Malays and eventually growing and evolving into a class of straits-born Chinese, the ‘Peranakan’. Peranakan communities continue to grow in Malacca and later extended to Penang and Singapore.

Peranakan ladies were called Nyonyas while their male counterparts were labeled Babas. They retained many traditions and beliefs of their Chinese forefathers, and adopted many more from the local Malay community. Hokkien was enriched with Malay words, and the sarong and kebaya became everyday clothes for this emerging class. The Peranakan adapted – to the land and its colonial rulers

Today’s Nyonyas and Babas have largely been assimilated into the Chinese community but the Nyonya art of cooking has been preserved, passed on from mothers to daughters through the centuries. Fusing Chinese, Malay, Indian and Western styles, Nyonya cuisine is prepared meticulously with great attention to detail, balancing aesthetics, aroma and taste. While Malacca and Singapore Nyonya cooking were influenced by their proximity to Indonesia, Penang Nyonya cuisine is laced with Thai secrets, being more sour and spicy. This is most evident in the many Kerabus the Penang Nyonya holds in her recipe book.

The preparation and cooking of Nyonya food can be a laborious, meticulous and time-consuming affair. The grinding, blending, pounding, and marinating of the ingredients can take several hours. Typical Nyonya spices complemented by the subtle fragrance of lemongrass, lengkuas (galangal or wild ginger), kunyit (turmeric root), fresh or dried chillies, candlenuts, shallots, kaffir lime leaves, pandan (screwpine), daun salam (fresh bay leaves), daun kesum(Thai basil leaves),daun kunyit(turmeric leaves) and ginger buds are crucial in the making of authentic Nyonya cuisine. Sauces made from coconut milk, tamarind seeds and curry pastes (freshly pounded with shallots, garlic, lemon grass, ginger and selected curry mix) is a testament of an excellent cooked meal at Nyonya Breeze

Last night I had a great night out with the group of foodies on food indulging at the Tropicana mall, just nearby my residence. It was truly awesome as we had BBQ and dessert from RUI’s too (the Opera was awesome, so were the white chocolate cheese cake)! I will let you know the details late on the coming post.

Well, about a month or so I was in Singapore, . . . . yup I was doing my baking tour and I was at Ann’s Culinary. I had a two days non-stop baking, back to back session. It was a real demanding classes which I truly enjoyed them as it was really challenging and it fabulous.

Are you looking for something different, great atmosphere and different setting, this had brought us to this place called Desa Park City, yet another garden and secludedly hidden within a township by itself. Within this place there is a double story mall called The Water Front which consist of restaurants, shops and a supermarket which are truly awesome gem. You can indulge a variety of restaurant here, from Italian, French, Chinese, local to ice cream parlour and even banking. So that weekend together with my guests we make our way to this place and headed to the Italian as we were well informed of the pasta offered at this Italian restaurant called La Casa which offer a truly al dente pasta, something that jive with my taste.

Baking Workshop this August in Ipoh

At last we had ourself a date booked, yes we will be having our first baking workshop in Ipoh. We had longing to do this, trying to get a place was not easy but at last this venue was make available to us at Yummy Kitchen Bake & Dine located at Ipoh Garden South (Sidney’s hometown).

Godiva Chocolatier Pavilion | Superb Gateux Kuala Lumpur !

I came to know about Godiva is through reading a post by a well known foodie named Jason. After reading his latest post on “” Chef At Home @ Tamarind, Sentul East” it makes me more wanting to visit Godiva as soon as possible. Chef At Home is a very young (21yo) and talented Chef as he had cooked a very simple and interesting 3-course meal for his guests on his birthday, as I was told by Jason on his blog. On knowning of his talent, my desire of wanting to see and taste his dessert creations had intensifiedly increased each day. Oh! by the way his named according to Jason’s post was Chef Jared.

Jerry & Pei Wern Wedding at KL Tower | A Flower Wedding Cake to Top The World

LONDON – SARAWAK – SITIAWAN – KUALA LUMPUR

Both Jerry and Pei Wern stayed in London and was back in Kuala Lumpur to celebrate their special wedding day at KL Tower in the city centre. End of last year Pei Wern email me to inquire about her wedding cake plus cupcakes too and the exploration of the most desired dessert began. At the end Pei Wern found what she wanted and we were hired. : )

How To Bake Coconut Macaroons

Love At The First Sight . . .

They are a wonderful couple and a heavenly partnership. The leftover red wine and the Sicao button chocolat in the cabinet would be the great combination dessert for tonight . . . .

Chocolat and Red Wine Cupcakes (20 medium cupcakes)

210gm butter, softened
220gm sugar
4eggs
35gm cocoa powder
250gm sifted cake flour
1 teaspoon baking powder
1/2 teaspoon cinnamon powder
110ml red wine
1/2 vanilla pod
160gm melted Sicao bitter chocolat

1. Preheat oven to 180C and have 20 cupcake wrappers
2. Whisk butter and sugar till light and fluffy, add one egg at a time, continue whisking.
3. Add in cocoa powder, cake flour, baking powder and cinnamon powder, fold in well.
4. Scrap the vanilla seed and add into the mixture.
5. Mix in red wine. Then fold in the melted bitter choclate.
6. Pour evenly the mixture into the cupcake wrappers.
7. Bake in the oven for 20-25 minutes.
8. Remove from the oven and allow to cool.
9. Top the surrface with buttercream or chocolat ganache

One Bite Cupcakes

AN INVITATION THAT CAN’T RESIST

Last weeek, I was requested to come out with some petite cakes for a group of visiting delegate from the commenwealth countries at my client’s place. I got only a day to come out with something simple, nice and presentable . . . . just for a light afternoon coffee break. So I created three different types of petite dessert . . . mini cupcakes, strawberry tarts and milk chocolat brownies . . . . . . these were the cupcakes created for that afternoon . . . . .
