Last we I was invited to have a One to One session with Dim Sum Master Chef Low Kim Ong and we were both rather nervous at start as I expected more tasters be joining me. Surprising, myself, my invited guest and my inviters had a cosy table set near the window with a fabulous Sunway Lagoon view at the restaurant. The lunch Dim Sum here at West Lake Garden had an interesting change of setting, they are moving into all time traditional Dim Sum setting, more casual with Dim Sum carts and a showcase of live cooking. One can witness claypot cooking while Dim Sums take on the bamboo steaming. It was a fabulous lunch for me, it was busy and filled with great sight and sound backdrops with more than 100 variation of Dim Sum at your service. How can one like myself resist such temptation.

Over the Wednesday, I make myself available on a invitation to attend a dinner hosted by the handsomely shy boyish French Chef Jerome Carrouee & also the new proud owner of Le Bouchon to dine and indulge his new french menu creation. French, I just love that word, just makes me craving for more of the food and sweets, just pure simplicity. Do you know, I too cook my own duck confit over a juicy refreshing orange sauce, defintely me. :)

Back to Le Bouchon, it is a very popular French cuisine restaurant located in the heart of Kuala Lumpur located along the Changkat Bukit Bintang road where most international fine dining restaurants are located.

On that night twenty specially invited guests were sitted while Le Bouchon’s culinary team and Chef Jerome Carrouee himself were gearing up in preparing a new five-course authentic French dinner with accompanying wines for dining pleasure.

Christmas is one of the festive that I always be looking forward to, shower with gifts left by Santa under the Christmas tree and the spread of food on the table. Spread of Ramadan Buffet at Eccucino

When I got home, I received an invitation card to attend a Ramadan dinner specially crafted by a well known Malay Cuisine Chef Azman Ahmad and his culinary team. In the invitation card, it said “You are kindly invited to attend a Ramadan tasting by Our Malay Cuisine Chef Azman Ahmad at Eccucino, Prince Hotel on xxth August 2008” Quickly I blocked the date on my diary.

On the day at Eccucino, I meet Chef Azman himself, great chef himself with full of personality. By the way do you know Chef Azman is famous for his fully flavoured Redangs . . . yes he is one of the top Malay Chef in Malaysia. This time Chef Azman had prepared a whole Roasted Lamb readily for carving which was the highlight of the night. Sitting next to the Roasted Lamb was Lemang and Chicken Rendang. As we moved along the food counter, his culinary chefs were busy churning out fresh chicken, beef, and fish dishes.

I was brief that the Ramadan Buffet will feature a cold selection of range salads and appetizers such as Acar, Otak-otak, Kerabu, Ulam-ulam and Serunding. As for the main dishes, there were the famous Malay Hot selection, Indian selections, Chinese selections, Middle Eastern selections, Western selection, Japanese selection such as Teppanyaki, Tempura, Sushi and Sashimi as well as Dessert selections featuring the Ice Cream Bar.

I tried the food served and it was delicious and marvelous especially for the Ramadan month and I also noticed that there was a lovely on going Gahazal performance too.

The Buka Puasa Buffet at Eccucino is available from 6.30pm to 10.30pm and priced at RM88.00++ per person.

Catch Of The Day With A Local Twist by Chef Zulkifly Mohammad Fairuz

Chef Zulkifly’s Neptune’s Catch

The signature dish, Neptune’s Catch was created by Chef De Partie, Chef Zulkifly or better known as Chef Zul, from the culinary team of Swiss-Garden Hotel Kuala Lumpur. Chef Zul has 13 years of experience in the hospitality industry and has held various key positions in 5 star hotels and restaurants in his early years in the kitchen.

He has garnered vast skills and exposure from his previous stint and training in Ireland in the Great Southern Hotel in Killerney for 2 and half years, where he specialized in the infusion of various ingredients to create sauces. The expertise which Chef Zul has acquired from attending the training in Ireland enables him to impart his expertise and skills to the rest of his culinary team in Swiss- Garden Hotel Kuala Lumpur.

Neptune’s Catch

Ingredients

80gm each Red snapper (2 portion fillet)
20gm Acar rampai
30gm Potato wedges
20ml Perchik sauce
20ml Tomato salsa

Preparation

Marinate the fillet. One with tom yam paste and one with basil and mixed herbs
Panfry fillets on both sides

Tomato salsa
Chop tomato, parsley and onions, add few drops of olive oil and combine. Set aside to rest before serving

Place fried potato wedges onto the plate. Stack the pan fried fillets onto the potato wedges and lace the fillets with tomato salsa and acar rampai. Lastly, drizzle the perchik sauce onto the fillets.
