This year at Swiss Garden Kuala Lumpur I had amazing dinner and nothing fancy, it was a Christmas Turkey dinner done truly the traditional way. The turkey was large and was roasted perfectly till golden brown. The brown sauce was tasty and complimented the soft and moist roasted turkey meat beautifully. I truly enjoyed it, I had my second helping within a few minutes, amazing me! :)

Sunny Yaw Year End Macarons

2009 had been a great introduction year for us as we have meet and made many great, kind and charming friends, new friends, students and clients. I never thought we would have reach to such a good result as we always thought it was just a dream, 2009 is definitely a year to treasure and to remember, a year that I will miss and will be longing for soon as our journey moves ahead.

This year end, I had been baking loads of macarons, believe me or not the word of macarons had been buzzing in my ear almost in the month of November and December. Even in January will be yet another macaron challenge for me, who would ever thought I would be given such a challenge, yes! I got to build macaron towers, two mini macaron towers requested by Didie and next a 2 feet tall macaron tower requested by Penny! such an intrigging challenge, it is a sure fun! :)

I had a great weekend, busy with work at my cake studio and also eating out with friends. Another coming great weekend will be happening again soon, this time I will be assisting Chef Ben Beh on his bread baking classes and also lots of cake baking.

CANELE PATISSERIE CHOCOLATERIE – SINGAPORE BEST DESSERTS

I will be having a few days free before the classes start and I decided to visit some of  the Singapore greatest patisserie and the first one I visited was the Canele at Robertson Walk which was located  just nearby the place I am staying at the moment. Janice informed that this shop is the first Canele outlet and also the central kitchen. It was an awesome place to be, full with lovely petite gateux and plenty to choose from. Just a heaven for me! :) The work of Chef Phang just amazed me and so well justified. As we had to meet up with Jak, we decided to do our dessert forking at Canele, Shaw Centre instead, another outlet that I would call a beautiful cake boutique.

Mango Cloud Chocolat Honey Cake | Big Boys Oven Sweet Dessert

I stumbled onto this recipe last weekend and found it to be really interesting and truely amazing. This recipe’s mango cloud is truely amazingly delicious. I know I did come across of this simlar mango cloud texture before . . . yes I had it at Dragon-i, this cloud texture is light and fluffy, just amazing to leave it in our mouth as it melts it’s way through into your system . . . just pure lovely. At Dragon-i, they have it in a size of a cloud bun, no flavouring added and filled with red bean fillings.

In February I got a call from Diyana and she requested me to get over to her place urgently as she needed me to assist her on her coming project at SOFIRA. I meet Diyana and Sofia at the studio that same day. They wanted BIGBOYSOVEN to bake lots of macarons, yes loads of them. Yes it was definitely exciting and fun too as  request was  to commission 1.000 pieces of macarons for  SOFIRA new line collection fashion show. The request was simple and yet elegant, coral and pink macarons filled with loads of white chocolate ganache.

OPERA – Always On My Mind


This opera cake had been always on my mind. Why?….. cause of it’s colour, texture and flavour as what Michael Buble sings ” Always on my mind”. Opera cake is something that I cannot resist. And here, I did a four layered opera cake. Each layer consists of thin layer of almond sponge cake, coffee syrup, butter cream and chocolate ganache. At the end I top it with gold flake and chocolate bits.

This is something that I can’t resist myself from, opera, you always on my mind.
