An Exclusive Chinese New Year Celebration Invitation

Having an exclusive invitation to ursher the Year of the Rabbit and to dine with an honoured and yet a very famous personality can be truly exciting and that happened to me just recently, it had caught me speechless. Yes I had the chance of a life time dining and meeting up with the world famous shoe designer, Dato’ Jimmy Choo. This was made possibble at Li Yen Chinese Restaurant at Rtz Carlton Kuala Lumpur. You can just fall for Li Yen immediately especially when you just step into this restaurant. It was surrounded with brilliant palette of warm colours, dark wood finishing and classical modern Chinese artistry. I just love the feel. Meeting up and sitting next to Dato’ Jimmy Choo was so special. We had great time chatting, exchange of ideas and he gave me valueable advice in what I am working on at the moment.

It had been awesome and I had make up my mind to start featuring a series of cooking posting of many great Master Chefs in Kuala Lumpur. For the first posting I would love to share the secrets from Master Chef Bong Jun Choi with you, of course with the consent of the chef himself. Master Chef Bong Jun Choi is a very well known chinese chef in Kuala Lumpur and had trained many fantastic chefs. Currently he is attached with the award winning Chinese restaurant Lai Po Heen at The Mandarin Oriental Kuala Lumpur. As we are going to celebrate the Chinese New Year, Chef Bong himself had created a few delicious recipes for us. In part 1 we will learn on how to create Steamed Chicken and Abalone Bao & Hand Rolled Aromatic Duck.

Silent of The Lamb With A Twist

ARROSTO DI AGNELLO CON BROCCOLETTI ALL OHO OLIO E SALSA ALIO ROSMARINO
ROASTED RACK OF LAMB MARINATED WITH HARISSA WITH ROSEMARY BARLIC JUS

Ingredients

280gm Lamb Rack (3 ribs)
200gm Mash Potato

Harrisa Marination

10gm Mint Leaf
10gm Chinese Parsley
10gm English Parsley
10gm Rosemary
10gm Thyme
10gm Basil
10gm Oregano
10gm Garlic Peeled
10gm Shallot Peeled
2gm Paprika
60ml Olive Oil

Arrosto1

Method

1. Blend all harissa herbs with olive oil til fine. Marinated it to the lamb for 2 hours.
2. Seal the lamb in hot frying pan and cook in oven to your doness.
3. Garnish with stach and vegetables on plate.
4. Once the lamb is cook to your doness, debone it and slice to presentation.
5. Pour the rosemary sauce and ready to served.
