Every Chinese New Year, The Palace Group of Restaurants without fail will always charm me into returning back for a refine and excellent celebration meal. This time the year of the rabbit, Mutiara Palace did not fail me at all and left me amused and wanting to return for another dining experience.

This year 2011, I had yet another awesome Chinese New Year celebration with awesome spectecular “Yee Sang” ( I always call this dish the Chinese New Year Salad Toss). We meet at Grand Imperial Restaurant at One Utama and we started off with the amazing delicious Sliced Smoked Breast Duck Yee Sang.

This Sliced Smoked Breast Duck Yee Sang was truly unique, something very delightful and interesting. It infused the whole Yee Sang dish with strong bursting flavours. I liked it as it was something new with a twist of western influence. I truly recommend this if you are dining here this Chinese New Year.

Having an exclusive invitation to ursher the Year of the Rabbit and to dine with an honoured and yet a very famous personality can be truly exciting and that happened to me just recently, it had caught me speechless. Yes I had the chance of a life time dining and meeting up with the world famous shoe designer, Dato’ Jimmy Choo. This was made possibble at Li Yen Chinese Restaurant at Rtz Carlton Kuala Lumpur. You can just fall for Li Yen immediately especially when you just step into this restaurant. It was surrounded with brilliant palette of warm colours, dark wood finishing and classical modern Chinese artistry. I just love the feel. Meeting up and sitting next to Dato’ Jimmy Choo was so special. We had great time chatting, exchange of ideas and he gave me valueable advice in what I am working on at the moment.

Big Boys Oven January 2011 Macaron Baking Class

I had been truly busy with Christmas desserts and now focusing getting some Chinese New Year cookies ready for the awesoem auspicious celebration! As for January I am glad that I am able to have a macaron baking class. Yes only one class for this January 2011. I was informed that my coming Feb baking class will definitely be packed. :) Yet another exciting thing to watch this 2011 will be the BBO baking classes workshop expansion! Yes it gonna be fabulous, just need to hold on a bit and we will let you know very soon!

This is awesome as I started my “Lou Sang” really early. It was fabulous indeed! Lovely texture, taste and what’s more, a joyful company.

This year lunar New Year or we called it the Spring Festival falls on 3rd February 2011 and I get to try a spendid repertoire of fabulous fare at The Emperor, Grand Dorsett Subang Hotel. While I was there I managed to glance through their auspicious special Lunar New Year menu ranging from light mouthwatering Steamed Scallop Roll with Black Bean Sauce, Dried Scallop Siew Mai for Dim Sum to delectable Abalone Bamboo Pith Roll with Sea Cucumber and Stewed Supreme Dried Seafood Platter.

Every Lunar New Year celebration would not be complete without the tradisional toss of prosperity. Gather the clan and every close friends together is a must and “Lou Hei” to a year filled with health, wealth and prosperity with a refreshing presentation of Yee Sang. This is what I did on that day! “Lou Sang” We had Four Seasons Prosperity “Yee Sang” which came with Butter Fish, Salmon, Tuna & Jelly Fish. Truly Auspicious!

Here is a quick intro about me if you have never heard of me before ‘I am Norman Musa, a self taught chef born in Butterworth and now resides in Manchester, UK. I am the Executive chef and co owner of Ning Restaurant in Manchester,UK. This year I was selected as Lotus Formula One Official Malaysian Chef to travel around the world with the Lotus team to cook for the like Tony Fernandes, drivers and whole team. Last year I was a finalist for Chef of the Year Award and also finalist for the Restaurant of the Year Award. I also self published my cookbook titled ‘Malaysian Food’ edited by my business partner, Andy Spracklen marketed in UK, Singapore and Malaysia. Together with Malaysia Kitchen campaign, we are working hard to promote Malaysian food in the UK. I found myself well perfectly spend on one of my weekends and that was at the Line Dance Charity for the Children from The House of Joy Puchong specially organised by the Fun Stompers, something that had caught my heart for sure. It was an enjoyable fun to have some exercise through line dance and what is more, it was also a day specially organised for the children to celebrate the Chinese New Year.

It had been a great start this year for us and with many more potential food projects in making. We had been eating around while ushering in the year of the Tiger and this great idea came to play in my mind for sometime now. With the help of my close buddies in the food scene we went on without stopping in order to achieve this wonderous mission, my dream is to produce photo covers with my bunch of great buddies and this Chinese New Year celebration was a great opportunity. So gathered, the camera man, the foodies and the venue! :)

The first photo we had inline was Ah Bok, Lionel and Sunny to do the Kung Fu pose, boys in action, ushering in the Tiger while we were all laughing behind the scene, it was awesomely funny! Strike a Pose!

It had been awesome and I had make up my mind to start featuring a series of cooking posting of many great Master Chefs in Kuala Lumpur. For the first posting I would love to share the secrets from Master Chef Bong Jun Choi with you, of course with the consent of the chef himself. Master Chef Bong Jun Choi is a very well known chinese chef in Kuala Lumpur and had trained many fantastic chefs. Currently he is attached with the award winning Chinese restaurant Lai Po Heen at The Mandarin Oriental Kuala Lumpur. As we are going to celebrate the Chinese New Year, Chef Bong himself had created a few delicious recipes for us. In part 1 we will learn on how to create Steamed Chicken and Abalone Bao & Hand Rolled Aromatic Duck.
