Simplicity Pastry Chocolate Tartlet with Chef Gerald Maridet

Gerald Maridet

My most desireable dessert over the weekend would be having a cup of coffee over a dark chocolate tartlet. A fabulous bitter sweet chocolate. Having to try almost a lot of recipes and I found this one from Chef Gerald Maridet can be very overwhelming. Very decadent. Full of simplicity. Easy to follow.

Honey Mousse with Apricot jelly

I have been work long shift almost everyday to get all the dessert orders ready for weddings, birthdays, father’s day and also had 5-days private baking classes while also conducting my macaron classes over the weekend. It was rather tiring and stressful, I was over worked and we had a mix up with one of our order too, it was Sid’s mistake :(

Honey Fuji Apple and Black Sesame Mousse Cake

honey fuji apple and black sesame moussecake 4

Well I am gearing into a great mood yet busy as I am preparing for a media interview for this weekend and I need to show them what I am goonna bake this weekend. I may sound cocky but I am excited on what I should be baking. Well definitely going to be exciting.

I stumbled upon this Fuji apple recipe and I find it pretty handy indeed as most of the ingredients can be easily found and even you can buy Fuji apples from the night market. At most it is not expensive and you can bake this cake all year round. I find it rather light and not too sweet yet simple which I like most. Simplicity is the best!

Tarte Fromage

I had been having a great time over the weekend although I have been struggling for time. I have been baking macarons with a great group of students of mine, some budding up coming young chefs from UITM, some were excited baby bakers and some got too interested yet excited with macarons. All of them did very well and all the macarons baked was a success, non cracks, all just perfect! You gals were awesome, now I am waiting with less stress for their home results, gosh! I am already excited, definitely my mobile and email will be flooded this coming weeks, and I hope not! :)

I was also had been busy sculpturing a two tier 50th birthday cake which came out to be gorgeous it was finished with black and red in colour. The feedback was truly positive, they like it! Then I had an australian cafe food excursion near my place and it was awesomely gorgeous. I truly love the burgers and salad yet it was so affordable. I can’t give you much details of it as Sidny will be reviewing it on his food blog soon.

It had been a long weekend for me and Sid as I was busy preparing for two lovely weddings, one in Penang for Grace and the other at Sungai Buluh for Angie. Both girls were terrific, Grace back from New York while Angie back from Sydney. I wish I had been at two places during the weekend but I had to be at one due to the distance and timing. Since Sid will be back on Saturday, I delivered Grace’s wedding cake and had Sid to delivery Angie’s wedding cake. And now we are totally exhausted resting at our own sweet home, but definitely will be posting about this two awesome wedding and a few more wedding that we did a few weeks ago. thanks girls, you were awesome! :)

MADAGASCAR CHOCOLATE VANILLA OLIVE CAKE | BIG BOYS OVEN SWEET DESSERT

We had a great time baking and meeting new friends in Johor Bahru (JB). We had 3 sets of baking on the first day instead of two by request and at the end all of us got into being a zombie . . . . yeah, we were so tired and went straight to our bunker!

There were a lot of changes in the Johor Bahru scenery, lots of new roads and new buildings as for food, I would amazingly say, just amazing, just delicious, just awesome!. We had loads of Italian food, you just can’t imagine, just pure lovely, perfect pasta and drooling pizza. We had japanese too, outstanding flavours, fresh shashimi, truely teppanyaki of a whole squid, unagi maki, tempura, not forgetting the garlic fried rice and flushed down with a few cup of rejunevating cooling green tea.

Another exciting menu we had, it was the Bak Kut Teh flushed within the Johor Bahru downtown scene, it was totally amazing delicious. Yet another exciting meal we had was the beef noodle and also the stewed duckling noodle, both amazingly delicious, something not to be missed and I will defintely post about them this coming weeks.

And as for today, I am going to share my delicious discovery of baking, a chocolate vanilla olive oil cake and a recipe by a modest, loyal, good looking and a winning pastry chef himself, Chef Ronny Leung from the famous Hong Kong Club.
