Andy & Rachel’s Wedding Cake

I just love sculpturing wedding cakes and this recent one is a beauty. I just love the two colours used, yellow and orange: colours choosen by the bride, Rachel. Both Andy & Rachel wanted something simple and yet stands our during their wedding and the colours were specially picked. The cupcakes, I kept them simple, basic butter cream swirl in both colours topped with silver balls. Stacked them in tiers.

SAGANO was my first Japanese restaurant to visit on my MIGF list, a very simple elegant with a home feel flush decorated restaurant, very comfortable indeed. This restaurant is located at the Renaissance Kuala Lumpur Hotel and with Chef Yastoshi Ito’s Japanese authentic, innovative and meticulously prepared culinary creations to indulge the diners. That night we were there to taste his creation and to be more authentic in culture we decidedd not to pair the festival signature creations with the picked wines but we have them with the in-house selected sake instead. I had been noted for my sharp taste in Japanese food amount my Japanese friend in Kyoto and I just can’t wait to indulge into Chef Yasutoshi Ito’s creations.

Terence & Pei Ming’s Wedding Cupcakes . . .

We meet Terence, Pei Ming and Amanda at our place few months back to discuss their wedding cupcakes and last month Terence & Pei Ming had their wedding dinner at Imperial Sheraton Hotel Kuala Lumpur. 400cupcakes were ordered for their wedding day while 30cupcakes were placed on the tiers at the stage and the rest was packed nicely in a cupcake box for the guests to take home after the wedding dinner.

As Terence and Pei Ming wanted a simple pink cupcakes and I baked them chocolat, vanilla and greentea cupcakes and swirled with pink butter cream. The cupcake tiers were beautifully arranged with champange glasses, beautiful maroon coloured ribbons and scattered with rose petals.

Triple Chocolat Cupcakes with Greentea Macaron Topping

I love having mini chocolat cakes in a sizeable cup just like a medium cupcake as it is easy to eat, not too much and can be very addictive. When I peaked into my recipe books for chocolate cakes, there were so many varieties such as chocolat mud, chocolat brownie, white chocolat strawberry, chocolat chilli, chocolat with macadamia nuts, chocolat fudge, chocolat cherry, mint chocolat, chocolat chips with raisins, hazelnut chocolat, orange chocolat and many many more. Well this time I baked a triple chocolat cupcake with greentea macaron topping. . . . . . What did I do? . . . . Well, I baked a chocolat cake with bite pieces of dark chocolat in it and topped with chocolat butter cream plus a green macaron shell with greentea cream . . . . . an a whole roasted almond. Here is the chocolate cupcake recipe that I love to share with you . . .

Ingredients(15 medium cupcakes)

Cupcakes
250gm Sifted cake flour
200gm Brown sugar
250gm Softened unsalted butter
3nos Eggs
120gm Melted dark chocolat
1tsp Vanilla essence
1tsp Baking powder
120ml Milk

Icing
120gm Softened unsalted butter
120gm Melted dark chocolat
1Tbsp Milk
1tsp Vanilla essence
80gm Sifted icing sugar
150gm Chocolat bits

Method

Cupcakes
1. Preheat the oven 175C(350F).
2. Place the butter in bowl and whisk, slowly add in the sugar by batches.
3. Add in the egg yolk and continue to whisk.
4. Add in vanilla essence and also the melted chocolat, continue to whisk.
5. Add in the sifted cake flour and milk by batches and continue to whisk.
6. Seperately beat the egg white till soft peak and gently fold them into the cake mixture.
7. Spoon the cupcake mixture into the cupcakes holder(about 50gm per holder).
8. Top the cupcake with chocolat bits.
8. Bake for 20-25mins.

Icing
1. Whisk the butter in a bowl.
2. Beat in milk until smooth.
3. Add in melted chocolat and vanilla essence.
4. Add in sugar and whisk until smooth, thick and creamy.
5. Place the cream ino the piping bag with the desired tip.
6. Pipe the cream onto the cupcakes according to your liking.
7. Decorate the cupcakes with almond and macaron shell creamed with greentea cream.

These cupcakes are adorable, lovely and gorgeous in many ways, they will definitely be such a seducer to your guests and will be a great gifts for birthdays or even weddings celebration . . . . . Love Sunny Yaw

Christmas Chocolat Brownie

250g butter
200g sugar
40g glucose syrup
2g salt
4 eggs
180g bittersweet chocolate
60g cake flour
200g walnut(crushed)

Method
1. Beat eggs, salt and sugar until fluffy
2. Add glucose syrup and melted chocolat. mix evenly.
3. Add sifted cake flour and melted butter. Mix evenly.
4. Add crushed walnuts and pour batter into baking dish. Bake at 170C -180C for 25-30 minutes.
5. Allow to coll. Top with chocolat mousse. Refrigerate until hardened. Cut into 6 different sized squares, then assemble.

Sid suggested to me that I should put some coloured butter cream to decorate this brownie in order to give some intensity of the festive….. maybe…..lol!…… I got to say this recipe is simple and can be done easily and fast especially when there is so many things to do. Brownie can be deep freeze, therefore you can prepare it earlier. I hope you will enjoy this one and I will be posting more christmas goodies on this coming months.

Christmas Chocolat Brownie

It is rather fast and christmas is just round the corner. I found some food bloggers had already started featuring christmas desserts and even introducing new exciting dessert books for this coming festive. I guess very soon we will able to see lots of beautiful christmas decoration at the shopping malls. Talking about shopping mall……. got to say it was really cool when yesterday we were at the Pavilion,KL, we were accidently introduced to the Grand Chef Yukichi Matsubara of the Loaf. We were amazed with all the fresh baked bread from this shop……bread, cookies, tarts and even jams can be found at this place. We were also introduced to the loaf cafe situated at the upper level too. Sadly, this time we were not able to take any photos as we forgotten to bring our camera along, maybe next time soon.

Back to this coming festive, I was think of baking something fun and simple but yet can be exciting. As I was looing through my baking books, I found an interesting and very basic dessert recipe but looks fantastic. It was this taiwan published cookbook named A Festival of French Dessert – Chocolate & Cake. The recipe that I am going to introduce throught this post is Chocolat Brownie. I found it easy and simple to bake compared to those, moussecakes and cheesecakes. Let us look at the ingredients which I had modified for a smaller portion:


250g butter

Black & White Cupcake (Part 1)

It had been a great weekend…. and as usual busy, but still manage to have time to meet up with friends and have lunch on Sunday. Busy with? really?… well baking for most, visiting new malls such as Pavilion and the Gardens, dinner with Steven Cheng, our new on board and regular food churner at Big Boys Kitchen, nothing else to talk but just talk about food over dinner… sounds bored but it was really a journey about food, creation and taste, it was something no one would like to share… especially their secrets. I did check on other bloggers update post and also not forgetting, updating my post.

Got to say, last week was such a happening days, for most we would like to thank Little Corner of Mine for awarding us the Creative Blogger Award. Thank you very much and will soon be awarding to some other great bloggers out there in the cyberworld.

Secondly, me and Sid had our 30 second fame on telly 6pm today. Steven Cheng was interviewed and his dish “mini monk jump over the wall” was featured on 8TV’s “Ho Chiak” food program. We were also interview about the dish…… and sid was having a joyly time… not forgetting me too.

On this post, I am posting my latest collection of cupcakes and I call them black & white cupcakes. Here I baked caramel banana cupcakes and decorated them with dark chocolat ganache and white butter cream and finished them off with chocolat at the centre. There are two sizes and with different decoration, a medium and a big ones and both of this cupcakes are available at Ole Cafe.




Prefer to keep them simple and maintain their natural beauty and elegant. They look so gorgeous just like my own babies. I also know that you are waiting for my tiramisu, and will be posting them this week. So while waiting make sure you have mascarpone cheese, sponge cake and a good espresso waiting in your fridge.

OPERA – Always On My Mind


This opera cake had been always on my mind. Why?….. cause of it’s colour, texture and flavour as what Michael Buble sings ” Always on my mind”. Opera cake is something that I cannot resist. And here, I did a four layered opera cake. Each layer consists of thin layer of almond sponge cake, coffee syrup, butter cream and chocolate ganache. At the end I top it with gold flake and chocolate bits.

This is something that I can’t resist myself from, opera, you always on my mind.
