White Chocolate Raspberry Square | Big Boys Oven Sweet Dessert

This is really funny, as I have been so into what I had been doing lately . . . . baking cakes created by top patissiers. You may be laughing at me crazily but I think it is so fun as it reminds me about building sand castle on the beach when I was young. Well a least this time, my bakes can be eaten rather swept away by the wild waves. Anyway this time I found yet another fantastic Austrian patissier who had been also a traveler himself. Over the years, he had proven himself repeatedly by winning many awards in various patisserie competitions and also being a judge in many different events. Well, I am referring to the amazing Master Chef Arno Urch.

Mango Cloud Chocolat Honey Cake | Big Boys Oven Sweet Dessert

I stumbled onto this recipe last weekend and found it to be really interesting and truely amazing. This recipe’s mango cloud is truely amazingly delicious. I know I did come across of this simlar mango cloud texture before . . . yes I had it at Dragon-i, this cloud texture is light and fluffy, just amazing to leave it in our mouth as it melts it’s way through into your system . . . just pure lovely. At Dragon-i, they have it in a size of a cloud bun, no flavouring added and filled with red bean fillings.

Wedding Cake Showcase | Prince Hotel

BIG BOYS OVEN WEDDING CAKES

This is a great news for myself and BigBoysOven, sure you may ask why and would like to know. Well we invited by Prince Hotel to showcase our wedding cake starting from this April 2009 at their hotel lobby. I myself was so excited and how fantastic this can be.

Therefore last week I created a three tier wedding cake and brought it over to the hotel on the weekend for the showcase. I did a simple one with butterflies and with orangy ribbons as the theme colour.

It was so excited upon my arrival at the hotel when I saw how beautiful the wedding display area was created by the hotel team. I also saw Carven Ong’s beautiful wedding gown and my wedding cake was placed next to it. read more »

In February I got a call from Diyana and she requested me to get over to her place urgently as she needed me to assist her on her coming project at SOFIRA. I meet Diyana and Sofia at the studio that same day. They wanted BIGBOYSOVEN to bake lots of macarons, yes loads of them. Yes it was definitely exciting and fun too as  request was  to commission 1.000 pieces of macarons for  SOFIRA new line collection fashion show. The request was simple and yet elegant, coral and pink macarons filled with loads of white chocolate ganache.

Croquants Aux Amandes . . . . Crispy Almonds | Big Boys Oven Sweet Recipe

SIMPLE AND DELICIOUS . . .

I was searching for the perfect recipe of Crispy Almond recently and I always end up baking a biscotti like biscuit which was a bit compact. I prefered something light and therefore the search for a crispy, light and delicious biscuit went on till I found this perfect recipe to my liking. With the leftover whole almond found in my food cabinet I went on to explore this yummilious crispy biscuit.

Ingredient

250gm Whole almond with skin
180gm Cake flour
450gm Sugar
50gm Vanilla sugar
100gm Egg white

Method

1. Heat oven at 180C
2. Roast the whole almond till light brown.
3. Sift sugar and cake flour.
4. Pour in egg white into the cake flour and sugar, mix the mixture.
5. Add in roasted into the mixture, mixed the mixture.
6. Leave the mixture to rest for about 15 mins.
7. Scoop the mixture with an ice cream scoop and place it on a non stick baking tray. Distance each scoop of the mixture about an inch away from each other.
8. Place the baking tray into the oven and bake for abou 20-25mins till golden brown at 180C
9. Once cooked take it out from the oven and let it cool down.
10. Coat the biscuit with melted chocolat(Optional).

I adored the crispiness of this biscuit and I just can’t stop indulging them, just lovely and I hope you will try this recipe . . . . Yours Sunny Yaw

February the 14th will be the Valentine’s Day and I had created four limited edition Valentine’s cupcakes inspired by my favourite star Martha Stewart. Each batch of this limited edition Valentine’s cupcakes come in a box of 12’s and personally handcrafted and decorated by myself. In each box you will able to find chocolat cake with strawberry compote, vanilla pod cake with mango, coffee cake with roasted walnut, lemon cake with blood orange peel.

The First-Ever Web 2.0 Magazine Hits The Town

I just found out today a NEW special edition Web2.0 magazine on food and dining by the name BestFoodJunction.com had just hit the town. In this edition, many of the work from various food bloggers had been featured such as from PasanKia, Joan, Joe, Lilian, Jasmine, Michael Yip, Christine, IpohWav3, Aishah and also Big Boys Oven too. This is incredible! Just one word fantastic.

A Flower Shower Wedding Cake . . . . . Alan & Jamie

A DREAM COME TRUE . . . .

I had a conversation with someone on the phone today.

“Hi, this is Big Boys Oven, it’s regarding about your cake”, I spoke.
“Who is this? Sid, the one who manage BBO or Sunny the good looking one with the photo on the blog” replied from someone.

Wow! I was shocked with joy . . . . me the good looking one, hahahahaha . . . such a compliment I ever received till today! I was totally blushed and still am even now! Thanks to someone, it was really motivated me to bake more from now on! heheheh . . . .

As I got back from Singapore, I created this cake specially for Alan & Jaime’s wedding at Holiday Inn, Glenmarie. I meet Jamie a month ago and she already had something in mine, a lovely huge 3tier wedding cake with beautiful orangy flowers combination over a light orange wedding cake flushed with some hand painted gold motifs. Here is the cake I created . . . .

Big Boys Oven’s Macaron Goes Japanese !!!

Hey! Great to be back and with lots to tell, Singapore treated me so well, baby sitted me so beautifully and yet not enough time to complete my exploration, from Orchard to Geylang, from Katong to Bugis, from “La Pa Sar” to Chinatown . . . . I just can’t imagine the among of walking that I did! . . . just amazingly executed.

Next I receieved an sms from Motoko . . . “BBO’s appearance on the december issue of PANORA” . . . . “WOW! JUST FANTASTIC!” , I told myself.

This month December 2008, PANORA featured about “Christmas” and introduced “Christmas Dessert” as most Japanese love sweets, and also seeking for nice gifts for not only in Christmas but also to visiting friends’ house and also as souvenir when they return back to Japan and Big Boys Oven’s macarons were featured as petite sweet gifts for Christmas, . . . SO COOL!

PANORA is the monthly magazine, publishes on 30th of every month.
