Midsummer Night Feast & Celebrity Chef John Burton Race

The Poster

I laughed when I read some of the comments. One was from Eric from UK, “What have you been eating lately, do post them up don’t keep them to yourself”.

Eric had flew in from UK recently and had a short intensive baking class with Sunny Yaw and while spending those days at our baking studio, Eric had the pleasure to savour a range of local food were bought for lunches and we made a survey on which was better and worst! :) It was a real discovery when comparing with individul taste.

The Midsummer Night Feast at Starhill Gallery, Kuala Lumpur had graced with great pleasure and I was there to experience it. The event had become an annual event and this was the third year that continues to excite the culinary scene with world class dining experiences under the leadership of YTL Corportae Executive Chef Kevin Cape together with a host of international celebrity chefs flown in specially to Kuala Lumour for the celebration.

NYONYA BREEZE Penang Finest Nyonya Cuisine

nyonya breeze

Nyonya Breeze located at Abu Siti Lane is yet another delicious nyonya heritage gourmet that not to be missed if you are in visiting the Penang Island. Upon the invitation of Uncle Lee, we headed to Nyonya Breeze right after our baking class ended.

nyonya breeze 2

According to my google search, six centuries ago, China’s Ming Dynasty began courting the kingdoms to the south, dispatching Admiral Zheng He on his seven epic journeys, during which he made port in Malacca and Singapore. To cement budding diplomatic and commercial ties with the kingdom of Malacca, the Imperial Princess Hang Li Po was married to Sultan Mansur Shah, the Sultan of Malacca at that time. Her entourage settled in Bukit Cina, marrying the local Malays and eventually growing and evolving into a class of straits-born Chinese, the ‘Peranakan’. Peranakan communities continue to grow in Malacca and later extended to Penang and Singapore.

Peranakan ladies were called Nyonyas while their male counterparts were labeled Babas. They retained many traditions and beliefs of their Chinese forefathers, and adopted many more from the local Malay community. Hokkien was enriched with Malay words, and the sarong and kebaya became everyday clothes for this emerging class. The Peranakan adapted – to the land and its colonial rulers

nyonya breeze 1

Today’s Nyonyas and Babas have largely been assimilated into the Chinese community but the Nyonya art of cooking has been preserved, passed on from mothers to daughters through the centuries. Fusing Chinese, Malay, Indian and Western styles, Nyonya cuisine is prepared meticulously with great attention to detail, balancing aesthetics, aroma and taste. While Malacca and Singapore Nyonya cooking were influenced by their proximity to Indonesia, Penang Nyonya cuisine is laced with Thai secrets, being more sour and spicy. This is most evident in the many Kerabus the Penang Nyonya holds in her recipe book.

The preparation and cooking of Nyonya food can be a laborious, meticulous and time-consuming affair. The grinding, blending, pounding, and marinating of the ingredients can take several hours. Typical Nyonya spices complemented by the subtle fragrance of lemongrass, lengkuas (galangal or wild ginger), kunyit (turmeric root), fresh or dried chillies, candlenuts, shallots, kaffir lime leaves, pandan (screwpine), daun salam (fresh bay leaves), daun kesum(Thai basil leaves),daun kunyit(turmeric leaves) and ginger buds are crucial in the making of authentic Nyonya cuisine. Sauces made from coconut milk, tamarind seeds and curry pastes (freshly pounded with shallots, garlic, lemon grass, ginger and selected curry mix) is a testament of an excellent cooked meal at Nyonya Breeze

RECREATING JERRY & PEI WERN’S WEDDING CAKE | SUGAR PASTE CLASS

It had been a very exciting weekend in Penang as it was my first time to teach my students on how to create a sugar paste wedding cake. “Well, this is nothing new to me”, I told myself with laughter. In fact creating sugar paste cakes was the first skill that I picked up when I got into the baking industry, that was more than 15years ago, and it was at the famous Sunflower Baking Shop at that time.

I usually make my own sugar paste and gum paste and seldom buy pre-made sugar paste as it is cheaper and fun to make. Therefore in the class I decided to teach my students from mastering the fundamental basic till the finished product. Well my students in Penang did so well and had mastered the skill and techniques without difficulty, well they spend a whole day with me but I think it is worth it. :)

Well let me show you what we did during the class and in this session we used a 2 tier dummy cake make out of styrofoam.

After lunch we returned back to Hong Yap at Jalan Siam to continue the baking class for the afternoon session. This time we had great fun baking and creaming the cupcakes and we even had a young little man in the class. :) He was for sure a chef in grooming.

In the evening we head off for a quick dinner before we departed for Kuala Lumpur. The hawker scene in Penang was awesome and so cultured. It brought back a lot of chilhood memories of my growing up. It was fun eating at the roadside in those days, it was so fun and full of heritage which we seldom experience this days.

Penang had played a great host to us and I myself will defintely be seeing your more in this coming 2009 . . . . always Sunny Yaw

On the second day, Lingzie, Sid and myself we went to Chok Dee Thai for a Thai cuisine and it was a very relax and comfortable place to dine. It was located at a row of colonial designed house and was renovated into a restaurant. We loved the dishes, very well flavoured, tasty and the price was affordable but the portion were slighty small.

a great week . . .

more to come . . . .

I had been busy, split myself here, there and everywhere lately . . . . . . do believe me, it was amazing that I survived . . . . but it was amazingly fun . . . . I am sure you would like to know, what a guy like myself had been busy with, rite! . . . . . prepared a great “purple & white” wedding last saturday . . . . and managed to take time for a total awesome food tasting together with a well-known foodblogger on the same day! . . . . . I can’t image how I can pull that off . . . . sunday, yet another hawker food hunt with my close friends . . . . . monday, I had a private baking class, don’t ask who my participants were, got to be confidential on this, lol! . . . . . . . tuesday, had a great nite out at Souled Out with bloggers, May, Sueme, Kelvin, Joshua, Jason, Andrew, Sid, our host Fanny and Guldip . . . . . . wednesday, hahahahaha a total recovery day for me! lol!

yes will be updating all this soon . . . . . yours Sunny Yaw

The Invasion of The Green Macaron

I love the green coloured macaron shells . . . just a pure irresistable attraction . . . having them over a dark coloured backdrop such as dark chocolat can be really amazing. Just look at them, they just look so attractive and so wanting just like from a beauty pageant. Beauty is the word and yet so elegant . . . the green macaron . . . . “such a frustration to me of wanting to have a bit of you, just all by myself”
