I adore his creation and his foresight towards his modern Chinese cuisine. His creation always amazed me and yet at anytime he can just pull out surprises especially when I was dining at his chef’s table. Executive Chinese Chef Roy Wong is definitely one of the BEST Chinese chef in town that accommodate with a fabulous modern twist and still preserve the taste and flavour. He definitely belts with the great fabulous cooking technic that makes his creation unique. The New Kim Ma came with a whole remake over that caught my awesome liking attention and having the present of Chef Roy Wong’s creation, I am sure one will experience the ultimate dining experience from sight, smell and taste. Definitely a bomb of goodness waiting to be discovered.

Having to celebrate the coming Chinese New Year while ushering the year of the horse can be such an exciting ritual through food and I had an awesome experience at Xin Cusine Chinese Restaurant at Concorde Hotel Kuala Lumpur. At Xin Cuisine Chinese Restaurant, wholesome home-style celebration dishes were put into play to capture the spirit of celebration and most of the dishes I had trult captured my excitment.

It was a fabulous lunch meet with friends from the media in a private room. Yes it had been ages that I meet them, that day it was brilliant, thank to my dearest Kattie. We had dim sum over brewed Chinese tea. We started of with a few basket of crystal jade skin prawn dumpling which was delish to my liking. A firm crunch texture of the prawn that ended with a fresh sea sweet. While the skin gave a superb biting texture. Not too bad.

Having to be invited and wait to taste the gourmet that is building up in the kitchen can be such mind blowing thing to do. “Will it be delicious or will it be a flop?”, I always ask myself when I am confronted with such dinner meet. I am truly not a good liar like some do, I just can’t smile and blow out the whistle of good news. Hence I learned the technique of conveying the not so good news in a good manner and work it out with the chefs and come out with a good solution. As for myself I just can’t hammer the badness of the food like some do. Some people thinks they have the right to talk bad in the public just because they pay for the food, to me I think they are bad people with just bad after taste.

As for me this time I travelled a bit further with a two and the half hours car drive at about an average of 80km/hour. Yes my first time out of Kuala Lumpur town for a food review. I was thrilled and excited about this trip. It had been some time now I wanted to try out his cooking, Chef Q (Khiew) at his restaurant Pau Loong Banquet Hall located at Teluk Intan. Amazing how one can be like myself will do, just due to the thrill of taste and the awesome goodness of food.

Over the weekend I attended a lunch Dim Sum at EE Chinese Cuisine located at Eastin Hotel Petaling Jaya. Before I start rambling over the food, I got to confess it was a fabulous DIM SUM experience of taste and craftmanship. Everyone was raving about it as far as I know, especially those sitting right and left from my seat. It was definitely a rave as I would put it, ” Premium all you can eat dim sum at RM48++ per pax is denifitely a great bargain”.

I had a great lunch and this time I was able to indulge Chef Chan Chong Yen’s lastest Chinese creation at Toh Lee. As the head chef, Chef Chan is known for his artistic and creative in his food direction while insist of freshness and finest in his ingredients At the restaurant that noon we had the pleasure to try out some of his creations from two of his oriental 6-course set lunchess Each set comprised of a starter, a soup, three main courses and a dessert. It is definitely a perfect feast.

Having a double Chinese New Year can be truly awesome , what’s more I got to celebrate them with friends. Adding the to it, we had Alan Yun, Justin Chan and Carven Ong to toast the ‘Yee Sang’ the Chinese New Year Toasting Salad during lunch time! At Tai Zi Heen we get to grace the occasion with sliced raw salmon. Toasting to prosperity was truly a hit, everybody was so into it. Loud cheer can be heard. I shouted with such a pride of wanting to have more fortune in this coming year of the rabbit.

He is a famous, he is well known, he is definitely a classic chef!

He is back in town for a week to showcase his fine crafting and creation named Four Dances of the Sea, which will feature the resources from the South Australia’s Eyre Peninsula at his kitchen palatte readily to be played. Upon knowning it was his last day, I decided not to waste any time, took Sunny and we headed for a ride to Senses and got ourself a table for two . . . . . . please!

He is Kuala Lumpur-born based in Adelaide Master Chef Cheong Liew, qouted as one of the hottest chefs alive by the American Food & Wine magazine. Cheong has had no classical traingin or foraml schooliing in culinary arts as i was told and the only training had been in his grandma’s kitchen, in a shophouse in Jalan Bandar above the family’s chickenfeed shop. The young Cheong Liew would accompany his grandma to the market every morning.

In 1969 he left to Melbourne to under take up engineering but of his interest in culinary he found himself at a Greek restaurant in Adelaide. Having an international hotel training, Cheong was introduced to the basics of classical cuisine and the discovery of asian cooking sparked an even greater interest in cooking. Cheong began to self explore French, Spanish, Chinese and Malaysian cuisine through books.

It had been awesome and I had make up my mind to start featuring a series of cooking posting of many great Master Chefs in Kuala Lumpur. For the first posting I would love to share the secrets from Master Chef Bong Jun Choi with you, of course with the consent of the chef himself. Master Chef Bong Jun Choi is a very well known chinese chef in Kuala Lumpur and had trained many fantastic chefs. Currently he is attached with the award winning Chinese restaurant Lai Po Heen at The Mandarin Oriental Kuala Lumpur. As we are going to celebrate the Chinese New Year, Chef Bong himself had created a few delicious recipes for us. In part 1 we will learn on how to create Steamed Chicken and Abalone Bao & Hand Rolled Aromatic Duck.
