It had been ages of me wanting to try out this make this spring onion pancakes. It was not too difficult to follow and the ingredients were not to many, flour, spring onion, salt and oil. My first try was not that successful as the inside of the dough was not cook well. The outcome would have been better if I had roll flatten the pancake before aorfrying.

At recent cake Chef Sunny Yaw had crafted a birthday cake for 80th celebration that comes with peaches and flamingos. The centre stage was this huge orangy pink peach sitting in the middle of an huge round fondant cake. The round fondant cake had embossed white flamingos and golden stems and leafs running down. It was an awesome moment that I walked into Lai Cheng Yuen Chinese Restaurant at Grand Millennium Kuala Lumpur to try out Chef Terence Fong’s new dishes that night. I was lead to the room and the table setting was gorgeous. As soon as the guests were seated, we were served with a warm pot of delicious Double Boiled Spare Rib with Apple and Almond Soup. The taste was lovely, it was intensify and it was served warm and the way I like it. As soon as Chef Terence Fong came into the room I insisted of him to share his recipe with my reader and without hesitation he agreed and I had a pleasant surprise. I found a jar of shrimp paste that was still at plenty and was hardly touch in my fridge. That gave me and idea of having an airfry shrimp paste chicken for dinner. This time I decided to coat the marinate chicken pieces with rice and corn flour. I had it airfried at 180C for 10mins. The chicken taste awesome when it is warm but less crisp when cold. Next round I will airfry them without coating and see if there is any difference.

I just love cooking something simple, easy and does not take too long to prepare. Brinjal is my favourite and like it being poached done and topped over a feel drops of soy sauce, oyster sauce and a few of chopped bird eye chilli. This time I try out my mum’s recipe. top the poached with pickled onion, garlic and bird eye chilli. I quiet like the taste, something sour and sweet, not a bad and goes pretty well with rice.

While the filling was just brilliant, it seduced not only but those who dined with me that night. It is a Saturday weekend I am already thinking what to recipe. Well at the moment I have a Salted Fish Chicken marinated in the fridge getting ready to be airfried and is the Hong Kong Shrimp Paste Chicken. All well tucked waiting. Now I got excited that I had a great day with my airfryer as I make about 13 pieces of Chicken Balls with fabulous success. I played well by having the present of salted egg yolk to give it a great umami taste while the present of century egg gave it a robust texture. Then I used egg to bind the whole mixture, that’s how 3 type of eggs are being make used. The outcome was terrific, golden crisp outside, tasty moist inside with bursting flavours. Salted egg York played well this round. It was a very addictive patty balls. I am having a jolly good eat. Recipe is as follow.

I just love having Tandoori Chicken with Garlic Naan Bread over a nice pulled milk tea. While having an Airfryer at home I got to try out making myself own Tandoori Chicken. I went hunting for the spices at Brickfileds and decided to try out Shan Tandoori Masala Mix. Having the spice mixed with over the chicken and marinate it over yoghurt, set aside for 3-4 hours in the fridge. The outcome was amazingly good, at par with those outside and my regular store.

That night he fulfilled my request and he prepared a fabulous recipe for me to share with my readers, an Apple Stuffed Chicken with Apple Bacon Risotto. For this post I will star of with his Apple Stuffed Chicken recipe and follow up with his risotto on the next coming post. His Apple Stuffed Chicken was a sure winner, simple and easy to execute on an airfryer that suits any homes. I was lucky that I got to taste a sampling, lovely it was.
