It is a Saturday weekend I am already thinking what to recipe. Well at the moment I have a Salted Fish Chicken marinated in the fridge getting ready to be airfried and is the Hong Kong Shrimp Paste Chicken. All well tucked waiting. Now I got excited that I had a great day with my airfryer as I make about 13 pieces of Chicken Balls with fabulous success. I played well by having the present of salted egg yolk to give it a great umami taste while the present of century egg gave it a robust texture. Then I used egg to bind the whole mixture, that’s how 3 type of eggs are being make used. The outcome was terrific, golden crisp outside, tasty moist inside with bursting flavours. Salted egg York played well this round. It was a very addictive patty balls. I am having a jolly good eat. Recipe is as follow.

A Bowl of Chicken Mix

300gm Minced Chicken
2 salted Egg Yolk (diced)
2 Century Egg (diced)
2 Egg
1 Bird Eye Chilli (chopped)
I tsp Sesame Oil
1/2 tsp Five Spice Power
1/2 tsp White Pepper
1 tsp Supreme Soy Sauce
1 Tbsp Oyster Sauce
1 tsp Chinese Wine (optional)
1 Tbsp Spring Onion (chopped)
8 Tbsp Rice Flour (Coating)
6 Tbsp Corn Flour (Coating)
Oil Spray
(Sriracha Chilli Sauce as Dipping)

Hand Molding The Chicken Balls

1. Place the minced chicken in a bowl and add in sesame oil, soy sauce, oyster sauce, Chinese wine, five spice powder, white pepper, salted egg York, century egg, spring onion, one egg and 2 Tbsp corn flour. Mix the ingredient and let it rest in the fridge for 1-2hours.
2. Place the balance corn flour and rice flour on a plate for coating the chicken balls. Place the egg on another bowl.
3. Preheat up the Airfryer at 185C.
4. Scoop a tablespoon of the chicken mixture and roll it over the flour mixture and dip it into the egg then roll it again over the flour mixture before placing it onto the Airfryer pan.
5. Place as many as you can (mine was about 6balls at one time). Give the balls some oil spray. Airfry them for about 10-12mins and turn the balls while airfrying to give it a more even colour.
6. Serve them with Sriracha chilli sauce with a touch of kaffir lime peel.

The balls looked adoreable and really delicious. Golden in colour and had a crisp other texture while moist inside. Dipping them into the Sriracha sauce such melts you away with delight. Definitely will pamper your dinners at home. I just love them, easy to make at no hassle yet a great company.
