Tamarind Fish Soup with Ikan Senangin

Tamarind fish soup was a jewel at my mum’s kitchen when I was young. A sour sweet based soup that cooked over with small fish and chilli gives this soup a great kick. I saw the ladies cooked them in their private comfort in the kitchen and I was requested to help in the peeling and cleaning. Therefore this recipe still runs in my head once awhile, cooking them is not a difficult thing to do.

The Ingredients

4 whole senangin fish
3 ginger torch / wild ginger flower (bunga kantan/bunga kencong), halved)
1 bundle daum kesum/laksa leafs
3 lemongrass (smashed)
5 chilli padi
4 slice galangal
5 whole shallot
3 garlic
2 tomatoes
3 pieces Asam Keping
120gm Tamarind
2 soup bowl Water
3 tablespoon Sugar
a pinch of salt to taste

Pressure Cook the Tamarind Broth

1. Dissolved Tamarind into one soup bowl of water. Thorw aay the seeds and save the tamarind juice.
2. Place all the ingredients in the pressure cooker pot except the ikan senangin.
3. Close the pressure cover and seal the valve. Pressure cook with Beef Mode and 30KPT. Once done leave to warm for 5mins.
4. Open the cover and place in the Ikan senangin and pressure cook at steam mode 5KPT. Once done leave it to warm 5mins.
5. The Tamarind fish is ready to indulge.
