I had converted this chicken recipe into an airfryer cooking, Chicken Varural a Southern India dish which is awesome and delicious. This dish is presented dry and fragrant. I find it simple and no hassle to make. The taste is so divine goes well with rice or roti.

To marinade (A);
1/2 whole chicken cut into medium/small pieces
3 tbsp ginger and garlic paste
2 tbsp chilli powder ~ reduce if you prefer less spicy
1/2 tsp turmeric powder
1/2 tsp garam masala
1 tsp tandoori powder

To fry; (B)
1/2 tsp cumin seeds
1 cinnamon stick
2 star anise
3 cardamoms
3 large onions thinly sliced
2 dried chillies
2 stalks lemongrass thinly sliced
2 sprigs curry leaves
cooking oil

Method :
Mix ingredients (A) and marinade for overnight
Heat oil in wok.
Airfry the chicken at 190C 10mins on the Airfryer pan. If you prefer a solid crispy, give it a few minutes longer on the airfryer. Transfer to a plate, with paper towel on.
Mix ingredients (B) in the leftover marinade mixture.
Change the airfryer tools to basket and put your cooking pot into action.
Add in oil and heat the airfryer to 180 15mins
Then aad in the ingrediients (B)
Stir-fry these ingredients in oil for 10-15 minutes.
Sprinkle a little salt and add the fried chicken pieces.
Mix thoroughly until the chicken pieces are well coated.
it’s ready to be served with rice.
