Avocado Pork Green Curry

Having stored too much of meat in the freezer makes me wanting to clear as much as possible before any new buys. Small bone pork was in the freezer box, I took it our and defrosted it for my next dish, a Thai Green Curry. This time I added avocado at the end of the cooking and it turn out brilliantly yummy. Here is the recipe to follow.

Ingredients

Ingredients
1 pcs Small Bone Pork “Sai Kuat”
6 bulb Shallot (blended)
3 bulb Garlic (blended)
1 bunch of Coriander Leafs
a pinch of Kaffir Lime Skin (slices thinly)
2 Kaffir Lime Leaf (slices thinly)
2 pcs Lemongrass (smashed)
1 cup water
1 tablespoon Oyster Sauce
1 whole ripe avocado (slice six portion)
3 tablespoon double cream

Method
1. Switch on the bake mode to saute the shallot, garlic, kaffir lime leafs, kaffir lime peel and green curry paste till fragrant.
2. Add in the small pork bone, coriander leafs, oyster sauce and water.
3. Close the cover and switch on the beef mode 50KPT.
4. Once completed, scoop out and add in avocado. Sevre with warm rice.

This green curry tasted amazingly delicious and the present of avocado is just brilliant. The soft and creamy texture of the avocado paired so well with the green curry sauce. It was addictive. The small pork bone was pressured to tenderly soft. I was just terrific.
