Baked Lingham’s Sriracha Spring Chicken

Its Christmas and able to get a turkey, well how about having a chicken instead. Like myself we are a small household only two of us, getting a small chicken will be fabulous. What I created for the night was a Baked Lingham’s Sriracha Spring Chicken and it was not too difficult to make.

The Ingredients for Baked Lingham’s Sriracha Spring Chicken

The ingredients need was a basic spring chicken easy available at the supermarket and so are the rest of the ingredients. As for the marination, I had minced this ingredient together garlic, onions, ginger, kaffir lime leaf and Lingham’s Sriracha sauce.

Blended Ingredients with Lingham Sriracha Sauce for Marination

Ingredients for Marination
3-4 cloves Garlic
6 Small Onions
2inc Fresh Ginger
2 tablespoon Lingham Sriracha Sauce
A dash of Salt, White Pepper & Sugar for tasting

Blend all the ingredients together then add in the Lingham Sriracha Sauce.
Coated the spring chicken with the marination and leave it in the fridge overnight or 3-4hours in the fridge.

Marinate The Spring Chicken

Stuffed The Spring Chicken with Leek Mushroom

Leek and Mushroom Stuffing
(You can use any type of mushroom for the stuffing such as button mushroom, fresh shitake mushroom or other type you prefer)

100gm Fresh Mushroom (sliced)
1 Leek (sliced)
1clove Crushed Garlic
1 tablespoon Oil

Heat up the oil then add in the garlic, fry till fragrant.
Add in Mushroom and leek, fry till soften.
Then set aside and let it cold.
Stuff it into the cavity of the chicken.

Wrapped The Spring Chicken with Aluminium Foil and Air Fry

Cooking Method. For this chicken I wrapped it with aluminium foil and cooked it inside the airfryer for about 20mins 185C. Once done, I take the aluminium foil out and continue to airfry the chicken for about 6-7mins 180C till golden brown. Once done the chicken is ready to serve.

This Baked Lingham’s Sriracha Spring Chicken tasted amazingly delicious and it was truly a satisfying dish by itself especislly this Christmas.
