Braised Whole Boneless Pork Knuckle

Over the weeks I had been wanting to cook a whole pork knuckle and I at recent I managed to have it prepared with my Philips pressure cooker. I came to know this whole pork knuckle dish gained some interest with foodies in Taiwan when many knuckles are prepped per evening for some restaurant and some were sold out most night. It takes hours to prepared over the gas stop but pressure cooker had shorten the time.

The texture of the pork especially the skin was soft and bouncy while the meat was tenderly soft. This can be achievable through the use of a pressure cooker. The whole cooking time taken was about less than an hour. By the way when you buy your pork knuckle get your butcher to debone it.

Recipe

A Clean The Pork Knuckle
1 whole Boneless Pork Knuckle
3-4 slices of Ginger
1 litre water

Method
Boiled the water with ginger.
Once boiled add in the pork knuckle
Boiled it over for about 5mins.

B
1 tablesppon Oil
5-6 slices of Ginger
3 Star Anise
1/2teaspoon Whole White Pepper
1/2Tablespoon Sesame Oil
2 Tablespoon Chinese Cooking Wine
2 Tablespoon Thick Dark Soya Sauce
2 Tablespoon Fish Sauce
2 Tablespoon Soya Sauce
1 Tablespoon Oyster Sauce
I Tablespoon Sugar
800ml Water

Method
Mix well the dark soy sauce, fish sauce, soya sauce, osyter sauce, sugar and water together.
Switch on the PPC bake to sauteed the ginger, star anise and whole white pepper till fragrant.
Place the cleaned pork knuckle into the pot and pour the Chinese Cooking wine to it follow with the mixed sauce.
Close the lid, switch off the baking then pressure cook at 40KPT (Braised/Beef)
