Break fast with authentic Malaysian ‘kampung’ cuisine including 18 types of porridge daily with four Iftar menus on rotation.
As the fasting month approaches, chefs at Chatz Brasserie, PARKROYAL Kuala Lumpur will be cooking up nostalgic ‘kampung’ dishes, bringing back memories of a mother’s cooking during Ramadhan. To reminisce these moments, a daily highlight of 18 types of porridge will be showcased at the main buffet line and dessert corner of Chatz Brasserie’s ‘Ramadhan Selera Kampung’. Kerabu, Grilled Fish, Barbecue Whole Lamb, Ayam Percik Iftar, western selections and mouth-watering local desserts will also be among the multitude of dishes offered.
At the Kerabu corner, appetise with the Pasembor Berlauk with Peanut Gravy, Kerabu Pucuk Paku, Kerabu Ayam Daun Kesom and Kerabu Jantung Pisang, followed by traditional Ulam such as Daun Selom Pucuk Ubi, Nangka Muda, Pucuk Pegaga and Ulam Raja. Savouries and Pickles choices include Ikan Sepat Masin, Paru Goreng Sambal, Hati Goreng Kicap, Sambal Tempe Berkentang, Lemang, Ketupat Palas and Serunding.
A Ramadhan tradition, the Bubur Lambuk Sayuran is a Malay rice porridge cooked with vegetables, mixed local herbs and spices. When Bubur Lambuk is prepared together in the village, it symbolises teamwork between one another. Other porridge flavours include the famous Lobster Porridge, Bubur Menguh Bali, Bubur Isi Ketam, Bubur Kacang Hijau Durian and Pengat Pisang.
At the Action station, Roti Canai, Murtabak and Capathi are freshly made to go well with Vegetable Dhalcha and Chicken Curry. The Grilled Fish station features an assortment of fish with home-made sauces such as Asam, Kicap Pedas, Thai Chilli and Kalasan. Mee Rebus, Asam Laksa, Laksa Johor and Prawn Mee are available at the Famous Noodles station. At the Carvery station, a Barbecue Whole Lamb will be tenderly barbecued to perfection and served with black pepper, mushroom and barbecue sauces.
Looking for some delicious KL Satay? Chicken, beef and lamb will complement Nasi Impit, onions and cucumber with peanut sauce, prepared by our bustling chefs who are stationed at the outdoor stalls. The Iftar main dishes include Ikan Masin Lemak Nenas, Kari Telur Ikan Sentul, Rendang Paru dan Hati, Ayam Kuzi, Daging Kerutub, Udang Lemak Belimbing, Ketam Borlado Nogeri and Sayur Manis Masak Lemak Putih Keledek. These nostalgic ‘kampung’ dishes often remind one of the home-cooked meal when breaking fast with the family at home.
Chatz Brasserie’s Ramadhan Special of Ayam Percik Iftar is a dish that should not be missed as the juicy Ayam Percik is roasted with spices and sauces that are prepared by the chefs. Marination is done a day earlier to allow the chicken sufficient time to absorb the ingredients. The often sought after Briyani is served with beef and chicken on alternate days, and served with fruit pickle, Dhalcha and Papadom.
Other Malaysian and international dishes include Chicken Rice, Fried Lobak, Keropok Lekor, Dim Sum, Char Kway Teow, Baked Oyster, Seafood Thermidor and Seafood Foo Yong Egg. To complete your meal, Sago Gula Melaka, Kuih Cara Berlauk, Kuih Seri Muka, Tepung Pelita, Badak Berendam and Durian Ice-cream are among your choices.
