Eight sumptuous courses are paired with GUINNESS® stout served in different ways to complement and bring out the full flavours of each dish, providing a tantalising sensation for the taste buds befitting the spirit of prosperity and celebration of the New Year festivities.
The Braised Bird’s Nest with Fresh Crab Meat looked gorgeously and served individual right infront of me and truly got me excitedly. The bird nest was braised to tender soft and just jived with my tasting palate. The fresh crab meat added a nice beautiful texture to the dish. I was definitely a luxurious dish that filled with plenty of collagen.
The Roasted Whole Suckling Pig was sizeable not to big, just at the right size and not too fat and oily. The skin was crisply done and without fail managed to seduce me into having a few delicious bites. The layer of hoi sin sauce coating on the meat gave such a nice taste to the roast. Truly at that moment I was madly in love with a roasted suckling pig.
The Steamed Pomfret done in traditional style was also another highlight on that night. The texture of the fish was perfectly smooth and firm, definitely the technique of steaming was put into a great play. Harnessing with a great superior soy sauce, this dish was taken to another exciting delicious height. I was totally mesmerized.
Everyone seated got exciting upon having a glanced at the burning hot claypot as it was filled with huge fresh water prawns and the Fresh Water King Prawn in Casserole was the next dish came running to rescue our ozzing hunger. The prawn was very sizeable huge and the meat was freshly firm. I truly had a very satisfied indulgence right on the spot.
The next Braised Sliced Abalone with Black Moss & Dried Oyster was definitely an attractive dish as the main guest, the abalone truly lured to our attention. The dried oyster was done to tenderly soft and pungent with aroma and the abalone truly excites the whole dish.
I loved the next dish the Claypot Rice with Chinese Sausages & Dried Meat Hong Kong Style as claypot rice is always my favourite item on each Chinese New Year menu. It kept me company with its present. The rice was done fragrantly while the Chinese sausages and dried meat from Hong Kong complimented beautifully.
As for dessert we had Deep Fried Nian Gao & Deep Fried Sweet Potato Pastries which played well to end the dinner and the Chilled Fresh Mango Puree with Sago and Pomelo cleansed my palate with such a style and I can imaginary hear the drum roll played aloud. It was sure a fabulous dinner that graced the event well.
