I had been waiting to baked this chicken as I had them tasted once during my university time many years back at a friend’s house dinner party. In fact I did help out to bake this chicken.
I prefer to use homemade breadcrumbs as it can be freshly make and not too difficult prepared. Just need to toast then and then blend it.
Ingredients6slices of Bread
4pcs Chicken Thighs
200gm Cheddar Cheese (grated)
150gm Parmesan Cheese (grated)
1can Chopped Tomato
1clove Garlic (smashed)
Clean and brine the chicken tights over night
Place the chicken thighs for pressure steaming in the pressure cooker
(Place the piece of aluminium foil on the base of the pressure cooker and add half cup of water to the base. Place the chicken thighs on top of the aluminium foil. Closed the pressure cooker lid and cook for about 10mins)
Once the chicken thighs are cooked, put it as aside.
Toast the bread and then blend it.
Place the breadcrumbs on a big bowl.
Add in the cheddar and parmesan cheese (leave some for topping during baking)
Add in the chopped tomato, egg and mix the mixture.
Coat the breadcrumbs mixture with the chicken thighs
Baked the coated chickens in the oven at 180C for 10mins
Topped them with parmesan and baked for another 5mins.
Love this coated baked chicken, the chicken is moist and the breadcrumb coat is deliciously yummy.
