To launch the ‘wine and dine’ Le French May, Chef Arrambide and Chef Galliot have created a delicious Le French May menu that offers discerning diners the very best of French cuisine.

The 5-course degustation menu features authentic French fare including organic hens egg with salmon, smoked milk broth; mushroom veloute with foie gras ravioli, truffle oil; risotto ‘vénéré’ with slow baked cod fish, Champagne smoothie; fine cheese from Hervé Mons and the chocolate heart. The menu is available from Thursday, April 28, 2011 to Thursday, June 23, 2011 at MOP$588* per person.

About Chef Guillaume Galliot

With a wealth of experience gained through 13 years in the culinary industry, Guillaume Galliot is the Chef de Cuisine at Horizons, City of Dreams, an integrated entertainment resort that is the newest “must experience” destination in Macau and developed by Melco Crown Entertainment Limited (NASDAQ: MPEL).

As a connoisseur of authentic French cuisine Galliot brings European flair to the fine dining experience at Horizons, with his contemporary approach based on French technique. For example Galliot’s interpretation of the classic ‘French Onion Soup’ compliments the traditional onion confit based on beef stock with an intense sweet onion ice cream – combining modern tastes with classical methods.

Prior to joining City of Dreams, Galliot was the consultant at the Pourcel Brother restaurant in Marrakech Morocco. He was responsible for designing the a la carte menu for the restaurant.

Galliot commenced his culinary career in Asia in 2004 and has worked for several prestigious hotel restaurants. He was appointed the Sous Chef at the famous Raffles Grill in the historic Raffles Hotel in Singapore – at the age of 23, the youngest sous chef in the history of Raffles Grill, followed by a position as Executive Sous-chef at JAAN restaurant in Raffles Beijing Hotel – winning Conde Naste’s prestigious ‘Hot Tables’ award in 2007. Following the accolades awarded to the restaurant Galliot was awarded ‘Top French Chef of the Year’ by Time Out magazine.

After graduating from Saint-cyr/Loire Culinary School in France, Galliot worked for a variety of prestigious French restaurants across France including the world famous 3 star Michelin restaurant by Jacques & Laurent Pourcel ‘Le Jardin des Sens’ where he gained his exceptional insight into the world of culinary arts. He went on to tour the world in 2002 and 2003, where he was featured at internationally acclaimed restaurants in New York, Saint Barthelemy in the Carribean, and opened the 1 star Michelin restaurant ‘La Maison Blanche’ in Paris before moving to Asia to continue his career.

Galliot has participated in Food Festivals and demonstrations in Singapore and Montreal, Canada gaining rapid recognition for his culinary prowess.

About Chef Philippe Arrambide
Growing up as the fourth generation of the Arrambide family hotel and restaurant business has meant fine French cuisine has always been part of Chef Philippe Arrambide’s life.

After attaining a BEP and CAP at the vocational secondary school in Biarritz and starting his culinary career in his family’s delightful hotel, Chef Arrambide acquired a wealth of culinary experience in many of France’s renown and acclaimed restaurants including Les Jardins de l’Opéra in Toulouse, Le Carré des Feuillants and Fauchon in Paris, and Le Jardin des Sens in Montpellier.

A 3rd Michelin star won by the Pourcel brothers in Montpellier left a big impression on Philippe and on returning to his family business in 2000 his achievements were recognized with a Michelin Two Star award in 2008 after attaining a first Michelin Star in 2002.
