Tarte Fromage

Method

1. Whisk the butter together with fine sugar and add in egg till fluffy. Then add in vanilla extract.
2. Gently fold in the almond powder and cake flour.
3. Fold till a dough is formed then chill in the freezer for an hour.
4. Once chilled, knead the dough till slightly soft.
5. Roll it out to about 3-4mm thick with a rolling oin.
6. Place it into the tart pans and set aside.

THE CHEESE FILLING

Ingredients
1800g Fresh Milk
100g Slice Cheese
500g Cream Cheese
160g Cake Floour
20g Corn Starch
300g Fine Sugar
600g Egg Yolk
60g Lemon Juice

Method
1. Preheat oven to upper heat 120C an lower heat 180C.
2. Double boil frwsh milk, butter, cream cheese and cheese slices in a bowl.
3. In another bowl, place the corn starch, cake flour and fine sugar and evenly mix.
4. Add in egg yolks and whisk till batter is formed.
5. Add in the cooked cheese mixture into the batter, then whisk till cream is formed.
6. Double boiled it until stiff then add in lemon juice and stir it well.
7. Pour the mixture into the prepared pastry shell.
8. Smooth the surface and then place it into the oven.
9. Bake it for about 45mins.

This is a very interesting cheese cake, light in taste and rather not too dense. This recipe is rather unique as cheese slice in being put to play and taste fabulous. I had this during my last macaron class, oh boy! they all liked it very much! Do try this at home, not too difficult to follow and it great to have during the lazy weekend. Lately I been fondling with cookies and I just love having the taste of my latest experiment, Earl Grey Tea Cookies and it goes very well as a cake base, lovely, well I will keep this for the next post . . . . . . . till now, love Sunny Yaw!
