Honey Fuji Apple and Black Sesame Mousse Cake

Black Sesame Mousse
100g Egg Yolk
50g Sugar
200g Whole Fat Milk
100g Sugar
150g Black Sesame Seed Paste
15g Gelatine Powder
300g Whippiing Cream

1. Heat up the egg yolks and 50g sugar to 86C.
2. Whisk the warm egg yolk mixture iin the mixer until cold, then dissolved gelatine in a sauce pan.
3. Bring the milk and 100g sugar to the boil.
4. Stir in the black sesame paste and boil it again and let it to cool.
5. Combine the cooled sesame into the egg yolks mixture and flod in the whipped cream until incorporate well.

1. Place a layer of honey cake onto the cake mould.
2. Spread the apple compote onto the surface of the cake.
3. Then spread the apple mousse, level smooth and freeze it.
4. Spread the black sesame mousse on top of the apple mousse, level smooth and freeze it.
5. Remove the mousse cake from the mould.
6. Finish the decoration with crushed macaron shell.
