Honey Fuji Apple and Black Sesame Mousse Cake

Italian Meringue
Ingredients
120g Egg White
150g Sugar
60ml Water
20g Glucose

Method
1. In a electronic mixer, whisk the egg white until frothy in a sauce pan.
2. Bring sugar, glucose and water to boil.
3. Simmer for 3 minutes or boil until 118C.
4. Pour hot syrup into stiff egg white, whisk until cool.

Apple Mousse
Ingredients
490g Fuji Apple Juice
40ml Honey or Calvados
250 Whipping Cream
200g Italian Meringue
10g Gelatine Powder

Method
1. Combine apple juice, calvados warm up to 40C.
2. Add the soaked gelatine and finally fold the whipped cream, Italian meringue into the mousse, set aside.
