Easter Chocolate

Easter is just round the corner and indulging chocolate will be a way to spend especially on such a festive occasion. I was also excited too as I was eyeing those awesome goodness chocolate. I was rather lucky as I managed to get Chef Holger Deh Executive Pastry Chef of The Mandarin Oriental Kuala Lumpur to share some of his delicious creations.

I was told that Chef Holger is a truly culinary artisan and he is best known for his contemporary style of desserts. He loves using a mixture of traditinal flavours and other unusual ingredients, mixing the sweet and the spicy, the sour and the salty. I was at his chocolate kitchen recently and it was so truly to see all his creations.

Chef Holger Deh

Raspberry Truffles (30pcs)

70g Raspberry Puree
16g Glucose
40g Butter
240g Melted Milk Chocolate



1. Brush a few strokes of red colored cocoa butter into the chocolate mould.
2. Wait until the cocoa butter has harden and cast white chocolate shells.
3. Bring the raspberry puree, glucose and butter to a boil.
4. Mix over the melted milk chocolate.
5. Mix with spatula, starting from the centre outward until the mixture becomes shiny.
6. Blend with a hand into the chocolate shell.
7. Allow to cryztallize for 24 to 36 hours at 17C, 60% hygrometer.
8. Cover with a thin layer of white chocolate.
9. Unmold.
