COGNAC CHOCOLATE, RICH CHOCOLATE MOUSSE WITH COGNAC BAVAROIS | BIG BOYS OVEN SWEET DESSERT

COGNAC CHOCOLATE 6

DARK CHOCOLATE MOUSSE

Ingredients
280g Dark chocolate 70%
75g Egg yolk
80g Caster sugar
30ml Water
1pc Gelatin (Sliver)
500ml Whipped cream

Method
1. Boiled the water and caster sugar to 121C.
2. Pour in the egg yolk and whisk in mixer until cool.
3. Mix with warm dark chocolate and melted gelatin.
4. Fold in the whipped cream.

COGNAC CHOCOLATE 5

CHOCOLATE GLAZE

Ingredients
290ml Water
290ml Cream
150g Cocoa Powder
430g Granulated Sugar
5pcs Gelatin (sliver)

Method
1. Boil the water, cream and caster sugar.
2. Stir in the cocoa powder and melted gelatin.
